Chai spiced pecan banana bread

I can’t believe Christmas is only a couple days away. This week has been quite hard because I have been missing my family back in SA so much. I think this time of year is super special and also hard in a lot of ways. For us, it’s the fact that life goes on over here and you kind live in these seasons apart from what your family is experiencing back home. They have vacation, sunshine, and togetherness and over here we’re kind of slummin it on our own, whilst still working. Therefore I have been baking more than usual, so we can get more of the festive vibes going.

Caramel soaked pumpkin fritters

Caramel soaked pumpkin fritters are just amazing as they sound and look. I wanted to recreate my utmost favorite side dish that tastes like dessert. These fritters are life changing and you’ll want to make them for every Sunday lunch from now on. I thought they might be quite fitting for the Christmas day, just because absolutely spoiling yourself is what it’s all about!

Salted caramel gingerbread pancakes

Salted caramel gingerbread pancakes are a festive treat to try out this week before all the Christmas spoils. the decadence continues starting now with these pretty pancakes! Apart from all the festive cookies that I have been baking, these pancakes have been the cherry on top!

Date caramel almond butter domes

Date caramel almond butter domes are the perfect easy plant-based dessert for your festive table this year. It looks super impressive and tastes truly delish. This time of year is truly magical especially since we have been living in France these past five years. I guess I love a white Christmas more than a sunny Christmas, I think it’s the fact that it is cozier and you can have so many excuses to drink lots and lots of hot chocolate.

Ginger chocolate oat cookies

Ginger chocolate oat cookies, I have been trying to find a name for the subtle spiced cookies. They are a mix between chocolate chip and festive ginger cookies, a phoenix you might call them. They are delightfully light, chewy and sweet. Christmas cookies are stressing me out for real, making beautiful cookies takes a lot of patience and loads of percision that is for sure! I have made two batches and the cookies came out all right, but the frosting is nothing to write home about! That’s where the true artist comes out…

Cinnamon sugar pumpkin fritters

Cinnamon sugar pumpkin fritters are vegan and oh so delicious! I was so surprised by these fritters that I made them two days in a row and even my better half could not tell the difference. They are crunchy on the outside and super soft and chewy. They remind me so much of my mother’s pumpkin fritters that we would have for Sunday lunch and I think even she would approve.
