Citrus olive oil cake

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 6 4 – 6 People Difficulty 0 Beginner Ingredients 2 1/4 cups self rising flour1/4 cup almond flour1 1⁄4 cups white or brown sugar3 teaspoons baking powderPinch of any good quality salt, optional1 cup (250g) soy, oat or coconut milk1⁄2 cup (125g) extra virgin olive oil @babylonstoren1⁄3 cup (80g) lemon, lime or orange juice and zest (about 2-3 lemons)1 teaspoon vanilla extract Frosting250g soft margarine2-3 cups icing sugar1-2 tbsp lemon juice1-2 tbsp lemon zest1 tsp vanilla extract     Method 1. Preheat your oven to 180°C. Line a bread loaf tin with parchment paper or spray with nonstick spray.3. Add all the dry ingredients (flour, sugar, baking powder, and salt) to a large mixing bowl.5. Mix until there are no lumps. Add all the wet ingredients (milk, oil, lemon juice/zest, and vanilla)and mix until smooth.6. Pour the lemon cake batter into your prepared loaf tin. Smooth the surface if necessary, and tap thebottom of the table a few times.7. Bake the cake for 1 hour or until you can poke a skewer in the middle and there’s no wet batter on it. As this is a moist cake, some crumbs on your skewer are fine.8. Allow the cake to cool in the loaf tin for 10 minutes then cool on a wire rack. Frosting  1. Roasted cauliflower hummus

Place the cauliflower florets in a bowl, drizzle witholive oil, add in the paprika, coriander, salt, pepper and mix well. Pour out on to a parchmentpaper lined sheet and bake for 20-25 minutes.2. Add all of the hummus ingredients to a blender and blend until smooth, add more milk orwater if needed, add half of the baked cauliflower in to the hummus.3. Blend again until smooth, serve the hummus with the last bit of roasted cauliflower, dukkah,pine nuts, fresh dill and toasted bread. Almond date seed rusks

  Recipe Ingredients Wet3 cups brown sugar1/3 cup flax seed flour mixed with equal amounts of water1 cup margarine melted1 tbsp apple cider vinegar500ml soy milkDry1 kg self rising flour5 cups bran3 tsp baking powder1 tsp saltExtra add in’s1 cup mixed seeds1 cup roasted almonds1 cup chopped dates1/2 cup shredded coconut Method 1. Preheat the oven to 180 degrees Celsius.2. In a big mixing bowl add the flour, bran, baking powder, salt, and extra add in’s.3. In another bowl add the wet ingredients, sugar and let it curdle for 5 minutes before addingin to the dry ingredients.4. Mix everything well with a spatula, making sure the extra add in’s are well incorporated.5. Scoop into two bread tins, sprinkle on more seeds and sugar, and bake for 40-45 minutesuntil brown.6. Once cooked, remove to cool in the bread pans, remove and slice into fingers, and place on baking trays to dry out in the oven for 3/4 hours at 110 degrees Celsius.7. Whatever season you may be in preserving leftovers is something that is becoming more of a necessity these days.  Recipe 10 Prep Time 8 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1/3 cup apple cider vinegar 1/4 cup sugar 1 tsp yellow mustard seeds 1/2 tsp chili flakes 2 cups water Salt and pepper Vegetables of choice Method Place the apple cider vinegar, sugar, mustard seeds, chili flakes, and water in a microwave proof container or heat over stove top. 2. Heat over 2-3 minutes stirring every now and again until the sugar has dissolved, add salt and pepper. 3. Place the vegetables you’d like to pickle in already sterilized jars and pour over the apple cider mixture, let it cool, add the jar on top, and place in a cool dry area or in the fridge. Creamy butternut chickpea curry

Add a dollop of olive oil to a pan, add in the diced onion, spices and fry until fragrant.2. Add in the butternut, chickpeas, coconut milk and the canned cherry tomatoes, salt andpepper to taste.3. Let the curry simmer for a bit, before serving with cooked bulgarwheat, limes, crispychickpeas, coconut cream, pomegranate jewels , mixed seeds and the polenta fingers.For the polenta fingers:1. Add all of the ingredients to a pot, bring to a simmer, whisking to avoid clots, once cooked after8-10 minutes pour in to a square ramenkin and place in the fridge to set. Apple pie tacos

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients Fluffy wholesome pancakes 3/4 cup nutty wheat or whole wheat flour of choice 3/4 cup cake flour 1 1/2 tsp baking powder 1 tsp baking soda pinch of salt 1 1/4 cup plant-based milk (I used soy) 1 tbsp apple cider vinegar 1/4 cup melted coconut oil 2 tbsp liquid sweetener like agave, golden syrup ect. 1 tsp vanilla extract Apple pie filling 3 medium pink lady apples washed and cubed 1 tbsp coconut oil 1/3 cup treacle sugar or coconut sugar 1 tsp ground cinnamon pinch of salt Extra’s Pecans Whipped coconut cream Method 1. Place the nutty wheat in a bowl and sift in the cake flour, add in the baking powder, baking soda and the salt. 2. In another bowl mix together the milk, apple cider vinegar, melted coconut oil, sweetener and the vanilla. 3. Let it curdle for 5 minutes before adding in to the flour mixture, mix well until there are no lumps 4. Let the batter sit for another five minutes before heating up 1 tsp coconut oil in a pan. 5. Add 2-3 dollops of the batter to make a big pancake and fry for 3-5 minutes on each side until bubbles start to form and the pancake starts to brown . 6. Once the pancakes are done, start by adding another dollop of coconut oil to the warm pan, add in the diced pink lady apple and fry for three minutes or so before adding in the sugar, pinch of salt and the cinnamon. 7. Fry a few minutes more until caramelised, remove from the heat and serve with the pancake formed like tacos, add dollops chilled coconut cream, pecans and extra sugar on top. Nut butter Skewers

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients Ingredients  Skewers 1 1/2 cup water (more if needed) 1 cup semolina 1/2 cup chickpea flour 1 heaped tbsp nutritional yeast Sauce 1/3 cup macadamia 1-2 cup honey or any other liquid sweetener 1 tbsp lemon juice 1/4 tsp smoked paprika 1/4 tsp ground cumin 1-2 tbsp boiling water to smooth it out Pinch of salt Serving Roasted Baby eggplants Roasted Patty pans Cous cous Fresh herbs for serving Method Method 1. Place the skewer ingredients in a bowl and add in the water, start to cook over medium heat until it starts to thicken, whisk well until there are no lumps, pour in to square tin/mould of choice and place to set in the fridge until set. 2. Cook the vegetables in the oven or stove top with olive oil, salt and pepper 3. Remove the semolina « tofu » slice and place on skewer sticks, dress with some olive oil, salt and pepper and fry or bake for 10-15 minutes. 4. Dress with some or the sauce and let it cook for another 3 minutes or so, serve the skewers with the vegetables, extra sauce and some couscous.
