One bowl vegan carrot cake is one of my absolute favorite cakes I have made thus far. It’s all a carrot cake should be, moist, tangy, chewy, nutty and super super yum! I am certainly making this one again and I might even add in a few extra ingredients the second time around. This cake is stuck on my brain, like in forever!

Hot cross bun pull apart loaf is the absolute best idea when you’re looking for something special to spice up your Easter celebrations. Its the perfect balance between doughy, sweet and spicy. It’s amazing to think that most all baked good can be made vegan, and oh bot, I’m so glad this one turned out so great! We thoroughly enjoyed this loaf so much and I even wanted to make it again but had to refrain myself to other Easter goodies for now. One thing is for sure, it was unforgettable.

Creamy cauliflower risotto soy maple thyme mushrooms has been the top point of my week so far, I tell you this week been rough and a comfy bowl of risotto just hit the spot. Thank goodness its Friday tomorrow! I am Presque fini with my vegan baking course that I have been racing to the finish this past week and I kindly note, that this risotto just might make your day too. It’s tangy, sweet, cheezy with hints of thyme in between every bite.
Blood orange waffles
Blood orange waffles couldn’t come at a better time. It’s spring pretty soon and oh my goodness I cannot wait. It’s been a pretty tough two weeks since my son’s second birthday. The notorious flue has gotten it grips on me. Hopefully it soon will pass, but for now, a crunchy stack of gluten-free waffles with these tangy blood oranges will suffice! I topped these vegan waffles with homemade coconut yogurt, bananas, coconut nectar and salted pistachio’s.
Pineapple upside down cake
Pineapple upside down cake has summer written all over it. It’s light, decadent and has a sweet tang thanks to the pineapple. I am in love with these last couple days. The mornings are still a bit fresh, but then later in the day, it gets slightly heated and then cools down once again around four in the afternoon. The birds sing and the wildflowers, especially the pops of red from the poppy flowers make me so happy. There are lilac trees and elderflower trees, that I didn’t even know was around us a year ago. I watch our son play, and he is just having a ball playing outside. This season of life I am enjoying so much.
Blueberry pear crumble
Blueberry pear crumble is a comfy alternative to my usual green smoothie lately. Since spring is nowhere to be seen and Castres is dreary and rainy like usual. I need a pick me up because I just can’t take this rain anymore. This blueberry pear crumble is just so yum, because first of all, it has creamy almond butter in, alongside with sweet pear and tangy blueberry. Absolutely yum!

Om die tafel met Marita van der Vyver, is ‘n droom onderhoud wat ‘n werklikheid geword het vir my. Nie net is sy ‘n ikoniese skrywer nie, maar sommer ‘n bobaas kook ook. Somerkos in Provence is sowaar net ‘n voorsmakie van die “creme de la creme” lewe van Marita van der Vyver in Frankryk. Ek het behoorlik gesmul toe ek deur haar Somerkos in Provence kosboek blaai en ek kon nie wag om elke resep te probeer nie.
