Blueberry pear crumble is a comfy alternative to my usual green smoothie lately. Since spring is nowhere to be seen and Castres is dreary and rainy like usual. I need a pick me up because I just can’t take this rain anymore. This blueberry pear crumble is just so yum, because first of all, it has creamy almond butter in, alongside with sweet pear and tangy blueberry. Absolutely yum!

This blueberry pear crumble is just so yum, because first of all, it has creamy almond butter in(my fav), alongside with sweet pear and tangy blueberry. Baked under a crispy crumbly layer.  Absolutely yum!

So obviously, any kind of pie is served with ice cream. I mean there is no other way. This mocha ice cream is out of this world. It just compliments this fruity pie crumble so much. Like you can see, I am craving my mothers home cooking, or just the fact that I won’t be cooking that much at all. Or that may be wishful thinking…a Mothers work is never done, even when you have a whole army to lend a hand. I guess life is a whole lot easier when there are grandparents to help when you need a night off.

 

A date night will be pretty good too. I have had a night out only two or three times this year. My husband actually tucked in our son for the first time (without me) after 15 months since he has been born. Totally crazy, kids just change everything. After being home alone with the kiddo the whole of last week, my son has gotten sick from creche and is currently teething his two-year molars. That indeed is crazy too, he will have all his teeth one of these days and he is not even one and a half yet. Now, do you understand why I need pie, ice cream, and chocolate all the time?

Ingredients

  • 1 cup sliced pears
  • 2/3 cup blueberries
  • 1 tsp almond butter
  • 1 tsp coconut oil
  • 1-2 tbsp agave
  • 1/2 tsp cinnamon
  • Pinch of salt

 

Crumble

  • 1/4 cup shredded coconut
  • 2/3 cup rolled oats
  • 1/2 tbsp almond butter
  • 1 1/2 tbsp agave
  • Pinch of salt
  • Almond milk

 

Avocado mocha ice cream

  • 1 small avocado
  • 1 can refrigerated coconut cream (400ml)
  • 3-4 medjool dates
  • 1/4 cup agave
  • 2/3 cup cocoa powder
  • 1 tsp espresso powder (nescafe )
  • 1/2 tsp vanilla
  • Pinch of salt
  • Cinnamon

Method

  1. Preheat oven to 175 degrees Celsius.
  2. For the filling, melt the coconut oil, almond butter, and agave in the microwave for about 40 seconds on high.
  3. Add the rest of the ingredients together and mix well, scoop into a glass container and move on to the crumble part.
  4. Mix all the dry ingredients together and fold in the melted coconut oil, slightly heated almond butter and agave.
  5. Mix well, till it’s a crumbly texture but not to dry, add a few splashes of almond milk for the right texture.
  6. Crumble this on to the blueberry pear filling, cover with aluminum and bake for 10 minutes before removing the aluminum to bake for another 10 minutes.

 

Avocado mocha ice cream 

  1. Blend the avocado, dates and cocoa powder together. Add a few splashed of coconut cream to smooth the mixture out.
  2. Whip up the rest of the coconut cream and then fold in the chocolate avo mixture.
  3. Scoop into a parchment paper lined plastic container or bread tin, place in the freezer and whisk every 30 minutes every three hours.
  4. If you can’t whisk it, remove about 40 minutes before serving to soften so that you can scoop generous portions.
  5. Tip: Place the ice cream scoop in a glass filled with boiling water, this will make it easier to scoop the ice cream.
  6. Serve with fresh coconut cream and mint.
