Black bean mango salsa

Zucchini shredded tofu enchilada bake

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty  0 Beginner Ingredients 4 large zucchini sliced lengthways into thin strips  1 heaped tbsp nutritional yeast  garlic salt  olive oil  2-3 cups grated tofu  1 cup canned chickpeas, drained  olive oil  1 heaped tbsp Mexican fajita spice mix or Mexican spice mix  Salt and pepper to taste  2 cups tomato sauce  1/4 cup harissa paste from Pesto Princess 1 packet of Pesto princess tomato sauce  2-3 cups shredded vegan mozzarella  3/4 cup vegan cream cheese mixed with 1/4 cup pesto basil lemon pesto from pesto Princess  More Vegan cream cheese to top  extra Harissa paste to serve  basil lime pesto to serve   sliced jalapeños to serve  fresh basil or cilantro to serve   Method Preheat the oven to 180 degrees Celsius.  Add the washed and sliced zucchini to a parchment paper-lined tray and drizzle with olive oil, garlic salt, and nutritional yeast.  Add the grated tofu and the chickpeas to a parchment paper lined pan, and drizzle with olive oil, Mexican spice mix, salt, and pepper. Mix well and bake for 20-25 minutes.  Bake the zucchini for 25 minutes or so until golden, remove to cool.  Add the harissa to the baking tray of choice, then 1/2 cup of the tomato sauce, and baked zucchini slices layered nicely next to one another, then add the shredded tofu and chickpeas, dollops of cream cheese, and vegan cheddar cheese. Repeat the layers until done, then lastly top with dollops of the cream cheese & vegan cheddar cheese.  Bake for 25-30 minutes until golden, lastly add the harissa paste, more cream cheese, jalapeño slices and fresh herbs.  Photo Gallery Hope you love this super easy and protein packed delicious recipe!! Protein Date banana bread

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty  0 Beginner Ingredients 3 over-ripe bananas1 heaped scoop of vegan protein powder 1 3/4 cup self-rising flour (sub half with oat or wholewheat flour) 1/2 cup brown sugar 1 cup milk 1 tbsp apple cider vinegar 1 tsp vanilla extract 1/2 tsp ground cinnamon 1 1/2 tsp baking powder 1/2 tsp baking soda Pinch of salt Chopped brown dates to top Method Preheat the oven to 180 degrees Celsius. Mash the banana well, add in the sugar, milk, oil, apple cider vinegar, and vanilla extract. Sift in the flour and the protein powder until well combined, pour into a parchment paper-lined bread tin, and add the chopped brown dates on top. Bake for 35-40 minutes until brown. Quinoa salad jars

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1-2 cups cooled cooked red quinoa (cook according to packet instructions) Sliced vegetables like radishes, cucumber, tomatoes & asparagus Rocket leaves Canned beans like butter beans, chickpeas ect    Salad dressing  1 tbsp Dijon mustard 2 tbsp honey 1 tbsp sesame oil Heaped 1 tbsp mayonnaise or tahini Warm water to smooth out the dressing Salt and pepper to taste  Method  Layer the salad jars with the leaves on top, and the dressing at the bottom, drizzle over the salad some oil to keep fresh. Falafel waffle bowls

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1 1/2 cup Simple truth chickpeas soaked in water overnight 1 cup thawed peas 1 tbsp tahini 1/2 a lemon juice squeezed out 1-2 tbsp olive oil Handful cilantro Handful Italian parsley 1 tsp sumac or dukkah 1 tsp ground cumin Salt and pepper to taste Milk or water to smooth out the batter 2 tbsp coconut & flaxseed bread mix from Simple truth (or just ground flax seeds) Serve the falafels with roasted carrots, butternut, zucchini, wholewheat couscous, hummus, and greens. Method 1. Place all of the falafel mixture in a high-speed blender, and blend until a smooth like consistency, almost a bit clumpy, add more liquid as needed. 2 Heat up your waffle maker or some oil to shallow fry the falafels. Add a generous scoop and bake or fry until brown. 3. Add with desired roasted vegetables, hummus, and greens or side vegetables. Freeze the rest for up to one month. Purple Sweet potato hummus

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1x can butterbeans drained 1 medium exotic sweet potato, steamed  1 tbsp smooth tahini  1-2 tbsp lemon juice  1-2 tbsp honey  1 tsp ground sumac 1 tsp ground cumin  Salt and pepper to taste  1/4 cup olive oil  Za’atar spice to top  Roasted purple sweet potato and chickpeas & butterbeans to serve  Fresh cilantro to serve  Some smooth tahini to serve  Method Drain the butterbeans from the can, and leave some of the liquid to blend.  Place 3/4 of the butterbeans along with the liquid of the can in a high-speed blender. Add the steamed sweet potato, tahini, lemon juice, honey, spices, and olive oil and blend until smooth. Add some liquid like plant milk or hot water if needed.  To top: slice and dice the other sweet potato, place on a parched paper-lined baking tray, and add the other 1/4 part of the butterbeans, drizzle with oil, some more sumac, za’atar, salt, and pepper. Roast for 15-20 minutes until golden.  Scoop the hummus on to a plate, and top with the roasted sweet potatoes, butterbeans, more za’atar, and fresh cilantro. Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients 1 cup Simple Truth Quinoa; cooked to package instructions1 large O-So-Orange Sweet Potato; peeled and cut into 1cm thick slices1 large exotic purple sweet potato; peeled and cut into 1m thick slices2 tbsp. Forage and Feast Olive OilSalt and pepper; to taste1 avocado1 packet (200g) shelled edamame beans1 cup baby spinach2 tbsp. Padkos Mixed NutsA few edible flowers for garnishFor the dressing:2 tbsp. tahini2 tbsp. olive oil1 tsp. mustard1 tbsp. honey or sugar1 tbsp. lemon juice2-3 tbsp. waterSalt and pepper; to taste¼ tsp. each of garlic, ginger, chili, fresh turmeric mix Method 1. Toss the sweet potatoes with olive oil, garlic, salt and pepper.2. Roast in a preheated oven/air fryer until golden. Ensure it’s cooked through.3. For the air fryer, air fry in the basket for 10 minutes at 200ºC, spreading the sweet potatoes out as much as possible.4. For the oven, spread the sweet potatoes on a roasting tray in a single layer. Roast for 25-30 minutes in a preheated oven at 200ºC.5. For the sauce, whisk together all the ingredients. Adjust seasoning to taste.6. Raspberry protein brownies

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty  0 Beginner Ingredients 2 tbsp flaxseed meal or chia meal• 11/2 cup self rising flour mix (sub with oat flour)• 1/4 cup Biogen protein powder• 1⁄4 tsp baking soda• 100 g 70% cocoa dark chocolate• 1/3 cup cacao powder• 1 tsp instant coffee (optional)• 1⁄2 tsp salt• 1/3 cup + 1 tbsp boiling water• 1 heaped cup sugar• 1⁄4 cup + 2 tbsp melted coconut oil• 100 g fresh raspberries Method Prepare chia or flax eggs by mixing ground up seeds with 3 tbsp of water in a small bowl. Setaside to activate. Pre-heat the oven to 180° C  Line a 20 cm x 20 cm baking tin with baking parchment. Make the baking parchment stick outof the tin so that you’re able to remove the brownies from the tin a little easier.  Weigh your flour, protein powder, add baking soda and whisk the two together with a spatula. Set aside. Boil a kettle of water. While the water is boiling, chop your chocolate very finely. Putit into a big mixing bowl, with cocao powder, instant coffee (if using) and salt. Stir well.Pour 100 ml / 1/3 cup + 1 tbsp boiling water into the chocolate, cacao powder andsalt mixture. Stir with a spoon so that chocolate melts in the hot liquid. Don’t add any morewater. Add in the sugar, flax egg (by this time it should have turned all sticky) and the coconutoil. Using a hand mixer, blend the mixture until it’s smooth. It’s time to add the flour and bakingsoda mixture. Add a little at a time and stir it into the chocolate mixture with a spoon. Do notbe tempted to use an electric mixer as it will overwork the batter. Stir just enough until thereare no flour pockets anymore, but no more than that. The batter will be super thick so youmay need to use your hands towards the end. Transfer the batter into the prepared baking tin. Smooth it with a spatula and decorate withfresh raspberries and more chocolate. Bake on the middle shelf for about 22-24 minutes (depending on how gooey you like yourbrownies and on your oven). If you like to keep them gooey, stick them in the fridge once cooland they will become deliciously fudgy after a few hours. Chocolate caramel pancakes is the only way to do the weekend right! Finally the brunch spots has started to open up again and even though you get to make the perfect pancakes at home with this recipe, i can’ wait to get out! Pancakes has been part of our confinement routine and i’d like to keep this routine going, because life without pancakes certainly seems pretty dull!

WHY plant based?

Why Plant-based/vegan? This is one of the most frequent asked questions I have received this past year. So what does it all mean? What do you eat, what protein do you eat, do you drink milk and eat eggs? The list goes on. To me this past year has been an easy transition, but to others, does the sacrifice suffice the reward?
