Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 4 Beginner Difficulty 0 Ingredients 2 medium gem squash sliced length-ways, steamed and seeds removed 1 cup soy or pea mince hydrated with some water 1 cup canned and drained white beans 1/2 red onion diced 1 tbsp tomato paste 1-2 tbsp sun-dried tomato pesto or ketchup 1-2 tsp soy sauce to taste 1 tsp oregano 1 tsp dried thyme salt and pepper to taste olive oil to fry other add-on’s sun-dried tomato pesto toasted bread cubes grated vegan parmesan cheese vegan creamed cheese toasted pine nuts fresh herbs Vegan cheese sauce 1 medium potato diced 1/2 cup chopped carrots 1 cups cashews 1 tsp miso paste or soy sauce 1/4 cup nutritional yeast 1 -2 tbsp corn stach salt and pepper to taste some milk to blend it out Method For the lasagna filling: Heat a pan with some oil, add the diced onion and the spices, and fry until nice and fragrant. Add the drained soy mince and beans and fry more before adding the tomato paste, pesto, and soy sauce, let it simmer on low. Steam the gem squash in some salted water until soft. For the cheese sauce: add the potatoes, carrots, and cashews to some boiling water for the cheese sauce and simmer everything until soft. Drain the cheese ingredients and add into a blender and add the miso paste, nutritional yeast, corn starch, salt, and pepper. Blend until smooth. Pour the sauce into a pot and bring to a simmer until it starts to thicken. Turn off the heat before ensembling the gem squash. Fill the gem squash with the lasagna filling, then top with the cheese and bake the gem squash for 10-15 minutes at 180 degrees Celsius. White bean chilli stuffed sweet potatoes

Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 0 Beginner Difficulty 0 Ingredients 2 medium sweet potatoes slightly steamed soft 3/4 cup butter beans 1/2 cup soy mince or crumbled tofu 1/4 red onion diced 1 tsp ground cumin 1 tsp ground coriander 1 tsp smoked paprika Pinch of chili powder Salt and pepper to taste 1 1/2 cup coconut cream 1-2 tbsp nutritional yeast 1-2 tbsp lime juice Olive oil Corn starch slurry 1 heaped tbsp cornstarch mixed with equal parts water To serve: Cream cheese Diced avocado Shredded cheese Lime slices Corn chips Crushed and roasted walnuts Method Make the white bean chili first. Add the diced red onion to a pan along with some olive oil and fry until fragrant, add the dry herbs and fry a bit more before adding in the butter beans and rehydrated soy minced, fry a bit more before adding in the seasoning, nutritional yeast, and the coconut milk. Add the lime juice and cornstarch slurry turn off the heat and set aside. Place the steamed sweet potatoes on the Air- fryer tray and bake for 10 minutes at 180 degrees Celsius. Slice lengthways and add 2-3 tbsp of the chili to the sweet potatoes, bake again for 10 minutes. Add your desired toppings and enjoy! Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty 0 Beginner Ingredients 1 can of black beans fried in a pan with some oil and mashed with 1 tsp dried cumin, 1 tsp dried smoked paprika, salt, pepper, and lemon juice. 1 tub @bwellfoods vegan spread (roasted onion, paprika cheddar & chives) Smashed avo with salt and lemon juice Roasted corn (roast fresh corn in an air fryer for 5-8 minutes at 180 degrees Celsius with oil, salt pepper spices) Couple tbs of your favorite salsa Sliced tomatoes Black olives sliced Fresh cilantro Chilli salt to top Method 1. Layer by starting with the chilled refined beans, tup of @bwellfoods dip, smashed avocado , salsa, roasted corn, tomatoes, olives, cilantro, salt, and pepper! Serve with corn chips. Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty 0 Beginner Ingredients 1x packet Simple Truth gluten-free pasta 2 cups cherry/Roma tomatoes, washed 1 red onion, quartered 1 garlic bulb sliced in half olive oil to drizzle salt and pepper to taste Simple truth Italian seasoning as desired 1/2 cup Simple truth sweet chili vegan cream cheese 200ml coconut cream or plant-based milk of choice 1/4 cup nutritional yeast some tomatoes to serve vegan feta, crumbled toasted pine nuts to serve fresh herbs to serve puff pastry hearts to serve Method Preheat the oven to 180 degrees Celsius. Add the tomatoes, diced onion, and garlic into a pan and drizzle with olive oil, salt pepper, and Italian seasoning. Let it roast for about 20-25 minutes until golden. Boil the pasta according to the packet instructions. Once the tomatoes has roasted, blend along with the sweet chili cream cheese, coconut milk/cream, Nutritional yeast, and more salt and pepper to taste if needed. Drain the pasta and rinse with a bit of cold water so they don’t stick together, add into a bowl and pour over the pasta sauce, add in diced tomatoes, and serve the pasta with the vegan feta, toasted pine nuts, and fresh herbs. Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 0 4 – 6 People Difficulty 0 Beginner Ingredients 2 medium sweet potatoes, steamed 1 can chickpeas, drained 1/2 red onion, diced olive oil to fry 1/3 cup peanut butter 1/2 can coconut milk 1 tbsp honey or agave syrup 1-2 tbsp lemon or lime juice 1 tsp cinnamon 1/2 tsp ground cumin 1/4 tsp yellow mustard seeds some water to smooth it out salt and pepper to taste vegan butter or margarine 1- 2 tbsp chili oil crunch vegan cream cheese to serve Fresh herbs to serve (basil, spring onion or cilantro) Method Boil or steam the sweet potatoes with the skins on until soft. Add some olive oil to a pan add the diced red onion and fry until translucent. Add the spices and dry a few minutes more before adding in the chickpeas, peanut butter, coconut milk, and some water if necessary. Add the honey , lemon juice and season to taste, slice the sweet potatoes lengthways and mash slightly with some butter. Add 2-3 tbsp of the chickpea mixture inside of the sweet potato and serve the sweet potato with the vegan cream cheese, chili oil crunch, and fresh herbs. I want to feel my best and it all comes down to what you eat how you rest, how you reset, and if food is the common denominator, then I am all for it! These raw peanut butter raisin bliss balls are just the perfect snack and they make the best meal prep lunchbox goodies to kick off this year to a great start… if you love peanut butter and raisins, these are the Perfect snack for you! Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients 1 1/4 cups gluten-free oats 1/3 cup shredded coconut (sub with almond flour or coconut flour) 1/2 tsp bicarbonate de soda 1 cup smooth peanut butter 1/3 cup honey/syrup of choice (sub with 1/2 cup soaked brown dates) 1/3 raisins (sub with chopped dates, chocolate chips or sprinkles) 1/4 tsp of salt 1/2 tsp vanilla extract add a scoop of protein powder to up the protein intake, like hemp, pea, or soya. alternatively add some chocolate chips if you like. Method Blend the oats and coconut ever so slightly, mix or melt the peanut butter and honey together (if needed), and whisk in the vanilla extract. Add the salt and bicarbonate de soda into the oats and mix well, then gradually add the peanut butter mixture until combined, add some milk or coconut oil for it to fully combine, and then fold in the raisins. Lemon passion fruit tart

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients Base 1x packet ginger cookies crushed (roughly 2 cups) 1 cup shredded coconut 200g melted vegan butter Filling 1 cup raw cashews, soaked in boiling water for at least 30 minutes 300g vegan cream cheese 200g coconut cream 1/4 cup lemon juice 1/4 cup passion fruit coulis 1 tsp vanilla extract 1/3 cup cornstarch pinch of salt Topping 200g white vegan chocolate (alternatively substitute the chocolate with 100g cashew butter, 1/3 cup coconut oil and 1/3 cup syrup ) more passion fruit to top fresh fruit to top lemon slices Method Crush the biscuits and add in the shredded coconut, mix in the melted butter and mix well. Press in to a parchment paper lined tart pan. Place the tart in the freezer to set. Place the filling ingredients in to a high speed blender and blend until smooth, pour the filling in to a saucepan and bring to a simmer until thick, pour on to the tart base and smooth it out, place in the fridge to set once again for 2-3 hours. Once the tart is set, add the chocolate into a a bowl or saucepan and let it melt, whisk in the cream until it starts to turn glossy, pour on to the tart, leaving the edges slightly bare for the extra passion fruit coulis. Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty 0 Beginner Ingredients Vegan sausage or vegan mince Tortillas of choice Salt and pepper to taste Cumin seeds Ground Paprika to season Grated vegan cheese or cheese slices Toppings Diced lettuce Diced baby tomatoes Picked Jalapeños Burger sauce 1/2 cup vegan mayonnaise 1/3 cup ketchup of choice 1 tbsp chili sauce like sriracha or gochujang 1/4 cup diced red onion 1/4 cup diced gherkins Method Heat a pan with some oil or non-stick spray. Smash the vegan mince onto the tortillas you are going to use, season with spices, salt, and pepper. Fry face-down on a pan until golden, flip over, and add the vegan cheese as fry or leave to melt for a bit right side up on the pan. Mix the burger sauce ingredients and season with salt. Add a generous dollop onto each fried taco, and layer them with the lettuce, tomatoes, pickled jalapeños, and some spice vegan cream cheese or other sauces of choice.
