Savoury Sweet potato muffins

Recipe Gallery Share the Love Recipe 0 Prep Time 20 Cook Time Serves 6 4 – 6 People Difficulty  0 Beginner Ingredients 3 cups (375g) self-rising or plain flour, whole wheat flour bread flour  1 tablespoon baking powder ½ teaspoon baking soda 1 tablespoon dried mixed Italian herbs or ground sun-dried tomatoes  2 teaspoons garlic powder, or onion powder ½ teaspoon salt 1 ¼ cups (315g) dairy-free milk ½ cup (125g) light olive oil, or oil of choice 1 tablespoon apple cider vinegar, lemon juice or white vinegar (optional) 1 cup (150g) grated sweet potato 1 cup  1/2 cup sun-dried tomatoes diced  ½ cup  baby spinach or kale leaves, finely chopped, optional   Method Add all of the dry ingredients to a large mixing bowl and mix until just combined. Add all the wet ingredients and sweet potatoes to the bowl and mix until just combined.  Use an ice cream scoop or a large spoon to divide the batter into your muffin pan.  make a generous swirl of sun-dried tomato paste on top of each muffin.  If desired, sprinkle pumpkin seeds on top of each muffin. Bake the muffins for 30-35 minutes or until you can insert a toothpick in a muffin and it comes out completely clean. Store leftover muffins in an airtight container at room temperature for a few days or in the fridge for a week or so. Peanut butter chocolate rice cake bars

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients Provita Rice cake crisp barsIngredients8-10 Provita rice cakes crushed into fine crumbs1 cup smooth peanut butter1/4 cup coconut oil1/4 cup syrup of choiceToppingMelted chocolate of choice (mix with some smooth peanut butter to make more)Caramel chocolate drops or peanut butter drops Method 1. Place the crushed Provita rice cakes in a bowl, melt together the peanut butter, coconut oil and syrup. Mix well and pour over the rice cakes. Press in to a parchment paper lined tray and freeze until set.2. Once set, remove and pour over your melted chocolate and chocolate drops, freeze again, once set, slice and enjoy! Drain the chickpeas and then place in some paper kitchen towels and rub off some of the skins.3. Add the chickpeas into a blender, add the tahini, olive oil, lemon juice, spices, garlic salt, pepper, and blend (add some plant milk if needed) until smooth.4. Scoop out onto a plate and top with diced cucumber, tomatoes, olives, feta, pine nuts, oliveoil and fresh herbs. Whatever season you may be in preserving leftovers is something that is becoming more of a necessity these days.  Recipe 10 Prep Time 8 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1/3 cup apple cider vinegar 1/4 cup sugar 1 tsp yellow mustard seeds 1/2 tsp chili flakes 2 cups water Salt and pepper Vegetables of choice Method Place the apple cider vinegar, sugar, mustard seeds, chili flakes, and water in a microwave proof container or heat over stove top. 2. Heat over 2-3 minutes stirring every now and again until the sugar has dissolved, add salt and pepper. 3. Place the vegetables you’d like to pickle in already sterilized jars and pour over the apple cider mixture, let it cool, add the jar on top, and place in a cool dry area or in the fridge. Hot cross bun pull apart loaf

Hot cross bun pull apart loaf is the absolute best idea when you’re looking for something special to spice up your Easter celebrations. Its the perfect balance between doughy, sweet and spicy. It’s amazing to think that most all baked good can be made vegan, and oh bot, I’m so glad this one turned out so great! We thoroughly enjoyed this loaf so much and I even wanted to make it again but had to refrain myself to other Easter goodies for now. One thing is for sure, it was unforgettable.
