Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 4 Beginner Difficulty 0 Ingredients Base 1 1/2 cups crushed Oreos (icing removed) 1/3 cup smooth peanut butter 100g melted vegan butter/margarine or coconut oil Filling 1 1/3 cups smooth peanut butter 300ml coconut cream 1/3 cup raw honey or sugar Topping 100g dark chocolate 1/4 cup coconut oil 1/4 cup coconut cream fresh berries Method Crush the Oreos and place them in a large bowl, melt the butter and peanut butter together, and mix in some liquid sweetener if you like. Press the tart base into a parchment paper-lined tart tin and place in the freezer to set. For the filling: add the peanut butter, coconut cream, honey, or Oreo icing into a high-speed blender and blend until smooth. Pour the tart filling onto the tart base and then place again in the fridge to set for 2-3 hours. Just before the tart sets completely, melt the chocolate, and coconut oil and gradually mix in the coconut cream until the chocolate looks thick and glossy. Once the tart has been set, pour the ganache over the tart filling, smooth it out, and decorate with the berries. Slice and enjoy, and keep the tart chilled for further enjoyment! Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 1 Beginner Difficulty 0 Ingredients 1 1/2 cups canned chickpeas 1/4 cup diced red onion 1/4 cups diced capers 1 tsp Dijon mustard or English mustard 1/3 cup mayonnaise 1-2 tbsp lemon or lime juice salt and pepper to taste some chili flakes or chili sauce if you like Salad leaves to serve sprouts or mini herbs to serve Crispy umami rice topping 1 cup leftover rice of choice 1/4 cup soy sauce 1-2 tbsp honey 1 tbsp rice wine vinegar or apple cider vinegar salt to taste sesame seeds Method Mash the chickpeas in a medium bowl and add in the rest of the chickpea tuna salad ingredients, adjust the seasoning according to your liking. For the crispy rice: add the rice soy sauce, honey, and vinegar to a parchment paper lined tray, mix well until the rice is covered in the sauce, sprinkle on some sesame seeds, and bake or air-fry for 10-15 minutes at 180 degrees Celsius until crispy! Scoop the salad on to some salad leaves (i used cos lettuce), top with the crispy rice, sprouts, and extra sesame seeds, and enjoy! Asian chopped noodle salad jar

Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 0 Beginner Difficulty 0 Ingredients Two glass jars 1x packet instant noodles Hot oil to fry PB sauce 1/2 cup smooth PB 1 tbsp honey 1 tbsp rice wine vinegar 1 tbsp soy sauce Some hot water Jars of salad fillings Chopped cabbage Chopped cucumber Cooked corn Shredded carrots Cooked Edamame Salted peanuts Method Heat some neutral oil to shallow fry some of the GF noodles, once the oil is nice and hot, fry the noodles until puffed up. Then, place on a paper towel to drain the excess oil. Add the rest of the noodles into the bowl, top with hot water, and the seasoning to marinate until the noodles are soft. For the jars: Mix the Peanut butter sauce ingredients and add hot water to smooth and thin out the sauce. Add 2 tbsp of the Peanut butter sauce to the bottom of the serving jars, then drain the cooked GF noodles and add one big scoop of the noodles on top of the sauce, then layer with the vegetables and top with the fried GF noodles crisps. Serve the jars with toasted salted peanuts, and shake the salad in a bowl once you’re ready to eat. Scoop out the Peanut butter sauce and mix well & enjoy! In a bowl, add the blended oats, milk, peanut butter protein powder, vanilla, and salt and let it sit thicken for at least an hour. (This you can make the night before)2. Once thickened, mix in your sweetener of choice and scoop into jars, top with melted chocolate and peanuts, and place in the freezer for 5 minutes until the chocolate has set.3. Serve and enjoy! Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients 1 1/4 cups gluten-free oats 1/3 cup shredded coconut (sub with almond flour or coconut flour) 1/2 tsp bicarbonate de soda 1 cup smooth peanut butter 1/3 cup honey/syrup of choice (sub with 1/2 cup soaked brown dates) 1/3 raisins (sub with chopped dates, chocolate chips or sprinkles) 1/4 tsp of salt 1/2 tsp vanilla extract add a scoop of protein powder to up the protein intake, like hemp, pea, or soya. alternatively add some chocolate chips if you like. Method Blend the oats and coconut ever so slightly, mix or melt the peanut butter and honey together (if needed), and whisk in the vanilla extract. Add the salt and bicarbonate de soda into the oats and mix well, then gradually add the peanut butter mixture until combined, add some milk or coconut oil for it to fully combine, and then fold in the raisins. Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty 0 Beginner Ingredients 250 g self-rising flour 50g glutinous rice flour 220 g castor sugar 90g brown sugar 1/2 tsp baking powder 1/2 tsp salt 1/2 cup smooth or crunchy Peanut butter 135 ml plant-based milk 180 ml coconut oil, melted 1 1/2 tsp vanilla extract caramel chocolate chips More peanut butter to top Chocolate chips if you like sugar to sprinkle before baking Method Preheat the oven to 180°C. Line a square brownie baking tin with parchment paper. In a bowl, combine all the flour, sugars, and salt, sifting everything so there are no lumps. Mix together the peanut butter, and the rest of the wet ingredients then add them into the bowl with the flour ingredients. Mix together well with a spatula until smooth. The batter can be slightly thick depending on the rice flour. Fold in some chocolate chips, mix, and stir well. In a small bowl, heat the peanut butter for a few seconds until melted. Drizzle the peanut butter over the brownie mix, and add a few sprinkles of sugar, make swirls with a knife. Bake the brownies for 35-40 minutes until just set in the centre, but still soft. Remove from the oven and leave to cool in the tin. When fully cooled, remove from the tin. Slice into squares and enjoy! Cook the noodles while you make the peanut butter sauce.2. Add a generous dollop of oil to a hot pan, add the garlic and the ginger and fry until fragrant.3. Add the peanut butter, sambal oelek, hot water and smooth out.4. Then add the honey/agave and soy sauce and let it simmer on low.5. Add the noodles and swirl until covered. This time of year is truly magical especially since we have been living in France these past five years.
