I can’t believe Christmas is only a couple days away. This week has been quite hard because I have been missing my family back in SA so much. I think this time of year is super special and also hard in a lot of ways. For us, it’s the fact that life goes on over here and you kind live in these seasons apart from what your family is experiencing back home. They have vacation, sunshine, and togetherness and over here we’re kind of slummin it on our own, whilst still working. Therefore I have been baking more than usual, so we can get more of the festive vibes going.

Therefore I have been baking more than usual, so we can get more of the festive vibes going.

But we got to keep things merry and light, because that’s the season all about in actual fact. We have so much to be thankful for and I am so thankful. The birth of Christ, love, sacrifice, and togetherness and we have to celebrate that. LIFE. Apart from us missing our families, we are going to make the best Christmas that we can. I was in quite a slump this week, but you know what, I want to make this Christmas a special one. Like I said in one of my previous posts, we are heading away for a couple days and I think a change of scenery is going to be so so good!

I love banana bread so much and I have made so many variations these last couple months. Just because I want to get the consistency right and the flavor perfect. There have a few mishaps like there always are when it comes to baking. It’s a trial and error most days and you know some days are just not good for baking. Then you need to step away from the kitchen. This banana bread though are not one of those times, it was simply perfect!

Ingredients

  • 3 very ripe bananas mashed
  • 2 cups spelt flour or all-purpose white flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 75 ml coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil or cashew butter
  • 1/4 cup soy milk
  • 1 tbsp apple cider vinegar
  • 2 tsp chai spice 
  • 1/2 cup pecans
  • 1/2 tsp salt
  • 1 tsp vanilla essence

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Mash the bananas and add the coconut sugar, maple syrup, soy milk, apple cider vinegar, melted coconut oil and vanilla essence.
  3. The sift the dry ingredients together and gradually add the wet ingredients into the dry.
  4. Leave some pecans aside and add a few on top before sprinkling over more coconut sugar on top and baking for 35-40 minutes until brown on top.
  5. Store in aluminum foil for it to retain it’s moisture or in an airtight container.
  6. The banana bread gets actually more tasty with time and you can keep it in the aluminium for up to four days.
