I can't believe Christmas is only a couple days away. This week has been quite hard because I have been missing my family back in SA so much. I think this time of year is super special and also hard in a lot of ways. For us, it's the fact that life goes on over here and you kind live in these seasons apart from what your family is experiencing back home. They have vacation, sunshine, and togetherness and over here we're kind of slummin it on our own, whilst still working. Therefore I have been baking more than usual, so we can get more of the festive vibes going.

Pecan brûléed banana tarts are just amazing. I love all the pumpkin and apple pie creations at the moment, but for some reason I just have pecans and beautifully sugar coated banana's on my brain. Prickly pear tapioca pudding is utterly amazing whether you decide to have it for breakfast or dessert. I actually ate this bowl of tapioca pudding with my son for breakfast and there was no complaining. It is light and subtly sweetened with juicy hints of prickly pear. I remember we ate these things so much as kids, all sliced up and cold from the fridge. My mother always said we shouldn't eat too much, but they were just too delish. Now I love to use these beauties in savory and sweet dishes.

Pecan crumb muffins are a combination of summer, autumn and winter all rolled into one. The different textures and tastes are somewhat comforting, yet light and crunchy at the same time. You'd want to eat more than one that's for sure. By the sight of my living room floor, my son purely enjoyed the muffins too. After I gave one to my 18-month-old, I too was eating more than one, because eating muffins beat's cleaning floor's. Crumblike anythings to a toddler is life, not so much for me when all the cleaning is involved.
