Blood orange waffles couldn’t come at a better time. It’s spring pretty soon and oh my goodness I cannot wait. It’s been a pretty tough two weeks since my son’s second birthday. The notorious flue has gotten it grips on me. Hopefully it soon will pass, but for now, a crunchy stack of gluten-free waffles with these tangy blood oranges will suffice! I topped these vegan waffles with homemade coconut yogurt, bananas, coconut nectar and salted pistachio’s.

The weather has been fairly odd, and it’s not something strange for the end of winter coming spring. You’re in the in-between, not wanting to wear thick layers of clothes neither wanting to wear summer gear just yet. Spring flowers are popping up everywhere and I’m over here so ready for summer! I have been taking a vegan baking course online (or only I’ve really just started) and have a couple more recipes to go.

Like in more than a few. It’s certainly not as easy as I thought it would be! There are still 15 recipes to go in only two short weeks, so a lot of eating will be done! So far I’ve made a gluten free raspberry mango loaf (which is one of the easier ones). At this stage, I’m making my own sourdough starter and there are going to be a couple of recipes I’ll have to make with it! But first, off I’ve had to get this flu in order, otherwise eating all these vegan goodies might taste like cardboard!

So here’s to pretty waffles, spring time and learning new things!

Blood orange waffles

Blood orange waffles

Ingredients 

  • 1 3/4 cup spelt flour or any other flour like whole wheat, oat or gluten-free can be used.
  • 1 1/4 cup plant based milk
  • 3 tbsp melted coconut oil
  • 2 tbsp apple cider vinegar
  • 1 tsp vanilla essence
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • One blood orange
  • 1 sliced banana
  • salted pistachio’s
  • coconut nectar or agave

Method

  1. Sift the flours, sugar, baking soda, salt an spices together and set aside.
  2. Whisk together the milk, apple cider and let it curdle a bit and then add this and the rest of the ingredients into the dry mixture.
  3. Let it sit for 10 minutes or so and then heat up the waffle maker.
  4. Scoop 2-3 tbsp waffle batter into the waffle maker, cook them accordingly until crunchy.
  5. Top with sliced blood oranges, coconut yogurt, coconut nectar or agave and salted pistachio’s!
  6. You can freeze these waffles too for some fresh waffles whenever you like!
