Gut friendly Baobab yogurt bowls

Gut-Friendly baobab yogurt bowl isn’t just packed with loads of vitamins, healthy fats and all round good for you gut goodness, it’s pretty tasty too. I made a batch of this tangy coconut nectar infused baobab coconut yogurt this week in collaboration with Soaring superfoods and I have to say, I am loving every second of it! The recipe creation and the yogurt that is!

I made a batch of this tangy coconut nectar infused baobab coconut yogurt this week in collaboration with Soaring superfoods and I have to say, I am loving every second of it! The recipe creation and the yogurt that is!

So let’s look at some of the health benefits of Baobab. It’s super high in vitamin C ( something you can never get enough of especially in winter time), Vitamin B6, Niacin, Iron (also very important for new mothers and young children) and potassium. It increases the feeling of fullness, which means obviously you tend to eat a tad less due to the high fiber content and the high-fat content in the yogurt. That is a super win, don’t you think!

It helps to regulate blood sugar levels and prevents spikes, and who doesn’t need a bit of stability when the morning slump comes around. I certainly have been feeling this working particularly since I have a toddler to run around after. Usually, around ten eleven in the morning I feel tired, hungry and low on energy and since I have been eating the baobab coconut yogurt I have noticed a change.

It promises to reduce inflammation and this is a great add in when you exercise regularly. The high fiber content also adds to digestive health and this, of course, is the focus of this recipe, to add to your digestive health. The fiber acts as a prebiotic which aid to digestive health and in the every day,  it’s a pretty good thing to add into your daily routine.

Gut friendly Baobab yogurt bowls

Baobab yogurt bowls

Ingredients 

  • Soaring superfoods baobab powder
  • 500ml coconut cream
  • 2 packets of yogurt starter
  • 2 tbsp agar agar
  • 1/4 cup coconut nectar
  • 1/4 tsp salt
  • 1/3 cup candied coconut sugar cashews
  • 1/2 cup Toasted oats and coconut shreds
  • one sliced kiwi fruit
  • Blueberries

Method

  1. Place the coconut cream in a microwavable bowl and then heat up for about one an half minute on high.
  2. The cream should be lukewarm, before adding in the yogurt culture, two teaspoons baobab powder, coconut nectar, and the salt.
  3. Whisk well and set aside and then add 1/4 cup cold water to the agar-agar, place in the microwave and heat up for about one minute until it becomes gel-like, remove and then vigorously whisk this into the yogurt mixture.
  4. Pour the yogurt into a glass jar container that seals well and wrap in a blanket and place in a warm area for up to two days, or place the yogurt in a yogurt maker and follow the instructions accordingly.
  5. Be sure to check the yogurt after a day or so to check the thickness, I added some more agar-agar after day one, just because I wasn’t happy with the consistency.
  6. Place in the fridge once the yogurt is ready and oh so tangy.
  7. To asemble the bowls, scoop out two to three tbsp of the coconut yogurt, add fresh fruit toasted oats and coconut and the candied coconut nectar cashews.

Coconut nectar candied cashews 

  1. Preheat oven to 175 degrees Celcius.
  2. Place the cashews on a parchment paper lined tray and then drizzle over the coconut nectar.
  3. Place in the oven for 10 minutes until bubbly and golden, remove to cool and then break up, and decorated the coconut yogurt bowl alongside the rest of the ingredients.

Notes:

  • Vanilla powder can be added to the yogurt for a more pleasant taste.
  • Coconut nectar can be replaced with agave or maple syrup.
