Quinoa pumpkin peach chickpea salad

Ingredients

  • 2 cups cooked quinoa 
  • 2 cups sliced orange pumpkin, slightly steamed 
  • 1 cup cooked chickpeas
  • Lemon pickle from @Razia’s
  • 1-2 tbsp honey 
  • salt and pepper 
  • 1-2 tbsp nutritional yeast 
  • 1-2 nectarines 
  • sprouts to serve 
  • sliced red onion 

Dressing 

  • 1 tsp English mustard 
  • 1-2 tsp honey 
  • 1-2 tsp apple cider vinegar
  • 1 tbsp olive oil 
  • salt and pepper to taste 

Method

  1. Preheat the oven to 180 degrees Celsius.
  2. Slice the pumpkin, add to a tray with the cooked chickpeas, mix in the pickle, honey and nutritional yeast, season to taste.
  3. Bake for 20-25 minutes until jammy, serve on the cooked quinoa, add sliced nectarine cubes, mix the dressing and pour over the salad, and sprinkle on the red onion and sprouts.
