They are the perfect pick me up, thanks to a powerful hit of caffeine. These bars for any mama will be life changing! I have recently gotten into eating more matcha due to a friend of mine. I always liked the taste. You would love or totally dislike matcha because first of all, it’s super green and secondly it tastes like grass.

My son had been going to school a bit more lately and I truly miss him during the day. Some would think what is wrong with me because some moms would beg for a break. But being with your kids all day becomes second nature after a while and when their little breaths are not there you miss your little ones. I guess that’s normal all around because we always want what we don’t have. We should just be thankful for a change? I am talking about myself right here, any lack of sleep and I am right up there with the moaners.

 

I am more of a pessimist by nature so I have to mentally decide somedays just to be happy even though I had a rough nights sleep. Therefore any sweet treats are very helpful in this area and you might see more sweet treats on my website because they are my fuel. I love to share too since it’s one of my love languages.  So these will also make the perfect treat for someone who will need them.

MATCHA STRAWBERRY SLICES

Ingredients

Matcha Filling

  • 300ml coconut milk or cream
  • 1/2 cup almond or soy milk
  • 1/2 cup cashews
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tsp matcha powder (according to your taste and the strength)
  • 1 tsp vanilla essence
  • 1/3 cup maple syrup
  • 1/4 tsp salt

 

Strawberry chai jam

  • 1 1/2 cup chopped strawberries
  • 2 tbsp chia seeds
  • 1/2 cup agave or maple syrup
  • pinch of salt

 

Base ingredients

  • 1/2 cup oats
  • 1/2 cup almond meal
  • 1 cup shredded coconut
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla essence
  • 1/4 tsp salt

 

Matcha chocolate layer

  • 1/3 cup coconut oil (optional- add melted coconut butter)
  • 1/3 cup maple syrup
  • 100ml coconut cream
  • 1 tsp matcha powder
  • Pinch of salt
  • Fresh strawberries

Method

  1. Start by making the filling: Add all the ingredients into a blender and blend till smooth.
  2. Pour the filling into a pot on the stove or into a microwavable bowl, cook on medium, stirring every now and again until thickened.
  3. For the strawberry chai jam: add all the ingredients together on a pot on the stove and let it simmer until thicken (for about 10 minutes) and leave to cool in the fridge.
  4. For the base, blend everything until fine and then remove and then add the vanilla coconut oil and maple syrup.
  5. Press into a square tin and then layer on the strawberry chai jam and then pour over the filling, set in the refrigerator or the fridge to set to cool.
  6. For the matcha chocolate: melt the coconut oil and add the rest of the ingredients and mix well until everything is well combined.
  7. Pour on to the matcha filling and then place in the fridge to set.
  8. When the chocolate topping is almost set, slice and add the strawberries on top.
  9. Leave to set for about two to three hours before slicing.

 

Notes:

  • It would be best to cool each layer before adding the next.
  • Be sure to add the filling immediately on to the base after it is cooked to keep it warm otherwise it will start to set before you add it on to the base.
