Ingredients

  • 8-10 cannoli pasta tubes
  • Oil to fry
    Filling
  • 300g creamed cheese or mascarpone cheese
  • 1 cup icing sugar or 1/3 cup golden syrup
  • 1 tbsp LSF freeze-dried coffee
  • Icing sugar to serve

Method

  1. Once the sweet potatoes are soft, mash with some butter, milk, nutritional yeast, salt, pepper, and garlic powder.
  2. Add a dollop of oil to a pan, then add in the diced onion, garlic, and thyme. Fry until fragrant.
  3. Then add in the mushrooms, soy sauce, tomato paste, vegetable stock, corn starch, and the cooked lentils.
  4. Cover and let it simmer for 15 minutes until the mushrooms are cooked through.
  5. Scoop the filling into serving dishes, top with the mashed sweet potatoes, and bake again for 10 minutes. Serve and enjoy!
