Vegan Hertzoggie is a very popular South African traditional recipe. It was always a dream of mine to recreate this recipe into a more “healthier” version, and even though there is still a decent amount of sugar in it. The vegan meringue and shortcrust base come pretty close to the original and all that sugar don’t even matter with the first bite. Its international apricot day, I thought these cookies are the perfect recipe to share! These cookies are making me crave summer and home really badly. They were loved by my husband, our son and some of my friends (they had no clue they were vegan).

This time of year is truly magical especially since we have been living in France these past five years. Vegan Hertzoggie tart has been on my mind for ages. Hertzoggies is one of my absolute favorite South African desserts ever. They usually come in a small cookie form and is enjoyed over tea and chats late afternoon. I certainly love this tart almost as much as the actual cookies. I have made a smaller cookie version too that I will share with you very soon, but for now this delish tart will take over your taste buds. 

Chocolate speculoos banana bread

Chocolate speculoos banana bread might be my new addiction, like all my other banana obsessions, this one is right at the top of the list. All things baking are running through my head, and with only so much space to eat everything, banana bread is one of my preferred baked goodies. What makes this loaf so special is the fact that it’s loaded with festive vibes all the way. With Christmas only a couple weeks away, I can’t help but feel weird about the whole thing. Maybe when kids are involved, you realize finally that time does indeed fly and soon our little munchkin will be two years old. It feels just like yesterday that he was born.
