Our Christmas menu is planned and all the South African decadences are on the list. Like malva pudding, melktert, rusks, pumpkin fritters and a whole lot of other goodies that is not necessarily plant-based but staples in South Africa. We love a whole lot of meat, butter, and cream on the menu, but no South African celebration is complete without pumpkin fritters. So you might think being vegan is quite limited and dull, but these fritters actually are just the exact opposite of borning!

I mean anything deep-fried and drenched in caramel should be out of this world, am I right? You can even have these for dessert, served with ice cream if you prefer. No judgment from my part, they might take over your Christmas menu altogether. My son especially loved them, and he is not a but pumpkin fan. Even his dad that can smell vegan by a mile away, even he couldn’t tell they where vegan after all. So I guess even the pros can be fooled. Still to this day he doesn’t know those beautiful caramel fritters are all natural and good for you. You just have to give these beauties a try to find out for yourselves how amazing they are. Ingredients

  • 1 cup cooked mashed pumpkin
  • 3/4 cup spelt flour or all purpose flour
  • 75 ml coconut sugar
  • 1 tsp coconut oil
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 750l oil to deep fry

 

Caramel sauce

Method

  1. Mix together the pumpkin fritter ingredients and sit to bubble slightly for a few minutes.
  2. Heat up about four cups of oil on medium to high heat, scoop out one tsp pumpkin fritter dough and when the fritter rises to the top you can start frying about four to five fritters at a time.
  3. Remove with a slotted spoon and let the excess oil drain before pouring the caramel sauce on top.
  4. Serve lukewarm and freeze the extra pumpkin fitters and just prep the sauce to pour over.

Caramel sauce 

  1. Reheat the caramel sauce slightly and then add the coconut cream and salt and set to heat a bit more in the microwave until bubbly.
  2. Pour over the cooled pumpkin fritters and store the rest of the caramel in the fridge in a glass container.

Notes:

  • You can serve these fritters with cinnamon sugar if you prefer.
  • Make use of good quality, non-toxic oil to do the deep frying.
  • The coconut sugar can be replaced with brown sugar.
