I don’t want to say it, but it is probably inevitable. Fall is only one month away and I am certainly not ready. The sun is shifting already in the morning and at night and I just want to stay right here in summer forever, but I guess this season of life can not last. Just like when I look at our son and I cannot believe how big he has gotten. That is what makes social media so scary, you can look back at photos and realize that time has moved on so much and somedays you are so stuck on the present.

I mean somedays, I am so stuck on what I am doing. Now I try to focus more on trying to enjoy my life more, my family more rather than focusing so much on all the things I don’t have but rather counting my blessings, here and now. Everything might look super glossy and perfect, but who knows the realities everyone has to face these days, really? I don’t want to regret andy part of it. I want to enjoy every second or every day. Even if it is not the best day!

 

So easy quick lunches are what I need most these days, just because you know living with a toddler is kind of stressful. He is standing on everything so I cannot leave him alone anymore. Not that I ever could, lol. But I swear it is a few seconds and he is either on the tv table, standing on the couch or halfway up the stairs. My heart.Broccoli quinoa corn patties

Not that I eat salads styled like this every day. In reality, mostly everything is chopped and mushed together. I even eat his leftovers, so my meals consist of so many different foods. But somedays, styling a salad is my creative outlet for the day. I need that. Hope you like these patties as much as I do, easy lunch done!

BROCCOLI QUINOA CORN PATTIES

Ingredients

  • 3/4 cup chickpea flour (garbanzo)
  • 2/3 cup almond meal
  • about 1/3 cup Almond milk
  • 1 flax egg (1 tbsp flax seeds grounded mixed with 1/4 cup water)
  • 1/4 cup canned corn
  • 1/3 cup mashed cooked broccoli
  • 2/3 cup cooked quinoa & beluga lentil mix or just regular quinoa will do
  • 1/4 tsp Cumin
  • 1/4 tsp coriander
  • Pinch Galic flakes
  • 1/4 tsp salt
  • Splash of lemon juice
  • 1 tsp honey

Method

  1. Mix together all the ingredients and let it thicken slightly before scooping about 1 heaped tbsp of the batter for each patty.
  2. Fry in coconut oil until both sides are fully browned and cooked.
  3. Serve with salad, brown rice, and seasonal vegetables.

Notes:

  • You can add chopped herbs into the dough for extra oomph. Like parsley, chives or spring onions.
  • Mango and avocado salsa would go great with these patties.
  • Exchange the lentils with canned, slightly mashed chickpeas.
