Ingredients

  • 2 cups mashed potatoes
  • 3/4 cup coconut flour
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1 cup plant-based milk
  • 200ml coconut cream

Creamy paprika smoked beans

  • 1 1/2 cup canned white beans drained
  • 1/2 red onion diced
  • 1 /2 tsp garlic clove
  • 3/4 tsp smoked paprika
  • 100ml coconut cream or full-fat coconut milk
  • Extra water to dilute
  • Salt and pepper to taste

 

Extra for garnish

  • Fresh avocado
  • Diced spring onion
  • Toasted sesame seeds

Method

  1. Preheat your oven or waffle maker once you have all the ingredients together to make the waffles. 
  2. Mix all of the waffle ingredients and spray your waffle maker with non-stick spray. 
  3. Add 2-3 dollops of the waffle mix to the waffle maker and bake according to waffle maker instructions until crispy. 
  4. While your cooking the waffles, start making the creamy smoked paprika beans. 
  5. Fry the onion, add the garlic, drainded white beans and fry for a few minutes before adding in the spices and the coconut milk. 
  6. Reduce the heat to low and add a bit of water if needed to keep the beans saucy. 
  7. Once the waffles are done, serve with the beans, sliced avocado, diced spring onion, and toasted sesame seeds. 

Notes:

  • The waffle mix can be different according to how fine you’ve mashed your potatoes, so you can add more flour or milk if needed.
  • I usually mash them with still a bit of potato intact, add a dollop of plant-based milk and vegan butter, plus a tbsp of nutritional yeast for extra cheesiness.
  • You can also add some diced tomatoes to break the creaminess of the white beans.
  • These waffles freeze well if you need a quick lunch with some fresh avocado and tomato on top.
