Ingredients

• 1/2 cup vegan butter, or margarine slightly softened
• 1 cup light brown sugar, packed
• 1/4 cup plant milk or yogurt
• 2 tsp vanilla extract
• 1 1/3 cups self-rising flour
• 1 1/3 cups rolled oats
• 1 tsp ground cinnamon
• 1 tsp baking soda
• 1/2 tsp salt
• 1/4 tsp ground cinnamon
• 1/2 cup chopped almonds
• 1/3 cup dried mangoes, sliced

Method

  1. Preheat the oven to 180 degrees Celsius. Line two large baking sheets with parchment paper.
  2. In a large bowl, combine vegan butter, and light brown sugar.. Using a spatula or a stand mixer, beat together until light and fluffy (about 1-2 minutes).
  3. Add the milk or yogurt and vanilla extract, then beat together to combine.
  4. Add the flour, rolled oats, baking soda, cinnamon, and salt to the bowl. Mix until the flour is evenly incorporated. Then, add in the chopped almonds, and chopped mangoes and stir together.
  5.  Scoop the cookie dough into balls and transfer to parchment-lined baking sheets.
  6. Add more almonds on top and some sugar. Bake cookies for 12 minutes, or until the edges are golden and the center is gooey.
