Coffee speculoos cookies and Espresso's are made for each other! I made these cookies last week and my taste tester was quite pleased. This is an old traditional South African recipe. In France, "Petite Gateau" is the name for small cookies that you receive with your tea or coffee and these cookies are perfect to accompany a hot cup of tea.

French Cremora tart has become a favorite of mine...Crumbly ginger base with a creamy tangy filling! Ginger biscuits are used instead of the traditional coconut biscuits that are found only in SA. I had to make some substitutions, but it worked out great!!
