Super creamy hemp pasta is such a delish weeknight meal, filled with so many nutritional goodies and vegan protein. I rarely eat pasta, but when I do I makes sure that I fill up on lots of vegetables and nutrition. This dish is the perfect balance between spoil, nutrition and just all around good flavors.

Why Plant-based/vegan? This is one of the most frequent asked questions I have received this past year. So what does it all mean? What do you eat, what protein do you eat, do you drink milk and eat eggs? The list goes on. To me this past year has been an easy transition, but to others, does the sacrifice suffice the reward?

Asian inspired sticky lentil balls were quite an unforgettable dish and there where seconds to spare. I love all things soy related and I am not afraid to confess. They are the perfect balance between sweet and sour. These protein loaded balls are just so amazing and super addictive! This super meal can be prepped beforehand and frozen for those days where you just don't know what to make or when you need an extra protein boost to your lunch or dinner bowl.

Curry Lentil Chickpea pancake

Curry Lentil Chickpea pancake is my retake on the Oh she glows giant chickpea pancake that I made a couple of years ago and absolutely fell in love with. Its dough, chewy and filled with protein goodness. I love to use garbanzo flour quite a lot in my kitchen- in stews, quiches, pastry dough, cookies etc. It has a unique taste and does not go as well with sweet dishes, but aces savory!
