Harissa Gnocchi stew

Recipe Gallery Share the Love Recipe Prep Time 0 Cook Time 0 4 – 6 People Serves 4 Beginner Difficulty  0 Ingredients 1 x 1kg soup & stew mix from @checkers_sa 1/2 cup onions, diced 1-2 crushed garlic cloves or garlic paste 1 tsp ground cinnamon 1 tsp ground coriander 400ml can of coconut milk 2 tsp tomato paste 1-2 tsp harissa spice mix or harissa paste 1/3 cup nutritional yeast 2-3 cups vegetable stock, 2-3 tbsp pomegranate molasses or date syrup or just raw honey Salt and pepper to taste 1 x packet Gnocchi of choice (i used forage and Feast spinach stuffed gnocchi) Toasted or caramelised pumpkin seeds to serve Pomegranate jewels Cream to top Method Heat some oil and add in the onion and spices, fry along with the garlic before adding in the stew mix, coconut milk, vegetable stock, tomato paste & nutritional yeast. Let it simmer for 15 minutes before adding in the harissa spice mix or paste, tomato paste, and molasses/honey. Season to taste and cover with a lid until the vegetables have softened. Once the vegetables are soft, add the gnocchi and press into the stew and let it simmer for about 5-8 minutes until the gnocchi is cooked. Serve the stew with the desired toppings as mentioned above and enjoy! Generously freeze the rest for your freezer. Photo Gallery Hope you love this cozy and comforting stew! M*

Gnocchi a la vodka

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 4 4 – 6 People Difficulty  0 Beginner Ingredients 1/2 cup chopped shallots  1 packet tomato paste (roughly 2 tsp)  1-2 crushed garlic cloves or garlic flakes or powder  1 cup vegetable or vegan chicken stock  1/4 cup vodka of choice  1 tsp truffle pesto (optional)  1 packet of your favorite vegan gnocchi  salt and pepper to taste  vegan parmesan to serve  vegan cream cheese to serve (i made my own fermented cashew cream cheese)  fresh herbs to serve  Method Cook the gnocchi according to the packet instructions (usually I boil them in hot water with some salt until soft), drain, and add to sauce.  For the sauce: Add the butter to a pan on medium heat, then gradually add the shallots and fry along with the garlic until fragrant.  Then squeeze in the tomato paste along with the truffle pesto, and the vegetable stock.  Let it simmer for 5-8 minutes before removing from the heat to pour in the vodka, dollops of cream cheese, or coconut cream, and mix well.  Now, Drain the gnocchi and add it to the sauce, mix well again, grate in as much vegan parmesan as you desire, and then broil the gnocchi bake for 5-8 minutes at 180 degrees Celsius.  Once broiled serve the gnocchi with more cream cheese, vegan parmesan, and fresh herbs.  Photo Gallery Hope you love this uber-creamy and satisfying dish! Cauliflower spinach pesto gnocchi

Recipe Gallery Share the Love Recipe 0 Prep Time 0 Cook Time Serves 2 4 – 6 People Difficulty  0 Beginner Ingredients 1 medium cauliflower head, cut into florets and steamed with some salt until tender 1 1/2 cups canned chickpeas, drained (reserve some of the liquid)   1 heaped tbsp runny tahini  1 tbsp lemon juice  1/2 tsp ground cumin  1/2 tsp ground cinnamon  1/2 tsp ground coriander  salt and pepper to taste  some plant-milk to smooth out 500g spinach gnocchi  1 cup cooked brown lentils Thai green pesto (love the one from Pesto Princess) fresh basil and more pesto to serve  olive oil  ground spices like cumin, coriander and cinnamon  splash of lime juice  Method Let the cauliflower cool and add half of the softened cauliflower to a blender along with the chickpeas (along with the reserved juices from the can), tahini, olive oil, lemon juice, cumin, coriander, salt and pepper and blend until smooth, add more liquid if needed.  Let it chill while you roast the rest of the cauliflower and the lentils. Add the cauliflower and lentils to a parchment paper lined pan and drizzle with more olive oil, cumin, coriander, cinnamon, and a dash of lime. Roast for 10-15 minutes at 180 degrees Celsius and until crispy.  Add the gnocchi to a hot pan and let it simmer until soft according to the packet instructions, drain from the water and add to a hot pan with some oil and a tbsp of the pesto, let it crisp up nicely.  Add the hummus to a plate and add the gnocchi, roasted cauliflower, and lentils, plus more dollops of pesto and fresh basil leaves.  Add a splash of lime and enjoy!
