Winter warming soups

Winter warming soups are soothers for my soul, especially since this winter has been so long. It seems as though it is getting better by the day and the spring blossoms have made their arrival. It is crazy to think that one year ago I had a newborn baby and absolutely no time to cook. I wish I tried more soup recipes, but in that "new" state of life, you kind of forget all and you're submerged into mothering mode. These soups have been so easy to make and I have made them numerous times. They are filling and so nutritious for any winter lunch or dinner...

Mushroom Spinach Chickpea waffles

Mushroom Spinach waffles are just YUM. We recently purchased a Tefal snack collection toaster that can do the works like yum toastees, muffins, donuts and Waffles. The sucky thing is that you have to buy the other plates for the donuts etc, but I just love the functionality of an appliance that can do so much. So that's why I certainly can vouch for this product. I can't wait to buy the donut plates so I can bake some donuts already! My son's first birthday and I am already undecisive between a waffle or donut bar? Choices, choices...I have forgotten how much I love the crunchy bite of a fresh waffle. Now I made these with chickpea flour that needs no eggs to get them combined. I just love Chickpea flour. It has a unique taste, but it's seriously so good and loaded with protein.

Autumn Beef lentil stew

Cozy beef lentil stew is one of my latest favorite recipes. The weather has been pretty indecisive just as Autumn aught to be I guess. I have switched my cupboards layered with winter goodies, but the sunshine has been pretty sweet lately. What makes this stew so perfect is the fact that its low carb, healthy and packet with winter veggies that will keep you fuller for longer when the winter chills do decide to come along!

Ten easy dinners

Honey Mustard Radish Chicken salad had been a winner! Radishes... are such a peppery and fresh vegetable. I never used to like radishes, but I had this amazing idea to mix radishes with full grain mustard, oven baked chicken and crispy chickpeas. Their color is just so beautiful.

Skiing Verbier

Skiing Verbier was certainly one of my top skiing destinations with an added price-tag of course...So to finish off this healthy week I made an asparagus salad with balsamic roasted strawberries and Burrata Mozzarella. Was super yum, vibrant and crunchy, served with charred grilled Fillet steak. I missed meat, in the alps, you will pay roughly 30-45 euros for a 200-300g steak... I'll stick to this salad, though.
