Spring pea barley risotto

Spring pea barley risotto is such an easy and cozy dish. It's spring and I am all for these fresh peas and asparagus that's in season. Winter has been a long one and still the bit of cold lingers for a cozy bowl of goodness. Barley risotto is so delicious and nutritious, certainly a must try with this super green sauce too!

Asparagus feta galette is such an easy meal to make with so much flavor. The crumbly vegan feta goes so well with the crispy pastry and the beautifully fresh asparagus and roasted almonds. It's a meal on its own or serves as the ultimate partner to any light lunch or dinner!

Skiing Verbier

Skiing Verbier was certainly one of my top skiing destinations with an added price-tag of course...So to finish off this healthy week I made an asparagus salad with balsamic roasted strawberries and Burrata Mozzarella. Was super yum, vibrant and crunchy, served with charred grilled Fillet steak. I missed meat, in the alps, you will pay roughly 30-45 euros for a 200-300g steak... I'll stick to this salad, though.
