Ingredients

Base
1 sheet puff pastry
2 cups plant milk of choice
1/3 cup lifestyle foods tapioca flour
1/3 cup chickpea flour
1/2 cup vegan cream cheese or cashew butter
1/2 tsp dried oregano
1/2 tsp dried fennel
Salt and pepper to taste
Filling
1/2 cup @lifestylefoods cooked quinoa
1/2 cup steamed chopped finely diced broccoli
1/2 cup cooked peas
1 cup kale diced
Vegan cheese

Method

1. Preheat oven to 180 degrees Celsius.
2. Roll out the puff pastry and measure out on the round-tart tin you use. Line the base with
parchment paper.
3. Whisk together the milk, tapioca flour, chickpea flour, cream cheese or dip, herbs, salt and
pepper.
4. Add in the vegetables and the quinoa, then pour this mixture on to the puff pastry, add some
vegan cheese on top. Bake for 35-40 minutes until set, let it chill before removing from the tart
mould.
5. Slice and enjoy!
