White bean hemp seed dip has got me like, I might love you more than hummus. This superfood loaded dip is so creamy and super easy to make. The best part might be the confit tomatoes that goes along with it. I fell in love with these tomatoes a while back after I bought them at a deli, the French certainly know how to bring out the deep flavors of food and starting with these tomatoes. They add so much depth to a meal and goes particularly great with a creamy dip.

Not only is this dip out of this world tasty, but it’s also super duper good for you loaded with healthy fats, protein, and vitamins. Hemp seeds, are super amazing little seeds that contain so many benefits for a vegan diet. It’s loaded with amino acid’s that could be found in eggs and meat. SO it’s perfect on top of a smoothie, toasts and oats. And with this dip, you kind of get it all in one, and that’s what makes it even more perfect as a lunch or side dish to a main.

White bean hemp seed dip

Ingredients 

  • 250g White beans slightly drained
  • 1 tbsp tahini
  • 1/4 cup shelled hemp seeds
  • 1 tbsp lemon juice
  • 1 tbsp honey or agave
  • Salt and pepper
  • Toasted sourdough bread

Confit tomatoes

  • Three cups sliced and quartered tomatoes or cherry tomatoes
  • olive oil
  • salt and pepper
  • 1 tsp dried garlic
  • Fresh thyme

Method

  1. Place all the dip ingredients in a blender and blend until smooth.
  2. Sere with fresh sourdough bread, avocado, confit tomatoes and salad.

Confit tomatoes 

  1. Preheat oven to 150 degrees Celcius.
  2. Wash and slice the tomatoes and place on a parchment paper lined baking tray, drizzle with olive oil, spices, salt and pepper.
  3. Toss and bake for around two hours to let the juices cook out and the tomatoes become jamlike.
  4. Store in a glass container for up to one week, use on toast, stews and salads.
