Today we went to IKEA. It was not the very first time but maybe the hundredth time. Since moving to France it has been our very first place we visited when we needed some new furniture. Unfortunately, back then we had no clue that everything we bought was to be assembled by us. So obviously the first night in our new house, we slept on the floor. A lot has changed since then and this time around we made a visit to go and buy organizational accessories for our son’s playroom. I mean, we walked out with a whole lot more than we budget for because making your toddler comfortable means you get to be comfortable too…Right?

So we pitched up with a few stuff and they still have to be organized and assembled. The best part, that I slowly back away from. If it’s one thing I do not like and that is assembling furniture. Pass me a mitten or chopping board if you please. I do not look forward to this winter, because in the depts of all this rain we have to entertain this little guy, therefore IKEA. I get you, you are totally worth it!

Talking about winter just around the corner. I can’t believe the noticeable change in the season already. I want to cry, but also I do love autumn, but do not like winter. What a predicament. I want all the food and the mood of fall, but none of the cold. I want to wear thick cozy sweaters and drink too much hot chocolate already, but no frost. Is that even possible? I guess not, maybe for dreamers. So yes, a giant cookie/ pizza is what’s on the menu to comfort all those who don’t want to say goodbye to summer. Luckily, this recipe will make you fall in love with summer, I mean fall all over again.

Walnut oatmeal pizookie

Walnut oatmeal Pizookie

Ingredients 

  • 1/2 cup oats ground into flour
  • 1/4 cup almond flour
  • 1/4 cup Spelt flour
  • 1/4 cup almond milk
  • 1 tsp apple cider vinegar
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • 1/4 cup chopped walnuts
  • 1/4 tsp salt
  • Extra maple syrup
Tonga bean Coconut yogurt
  • 400ml coconut yogurt
  • 2 tonga beans

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Mix the cookie ingredients together and then leave a few walnuts aside to top on to the cookie;
  3. Place a few on the cookie and then place in the oven to bake for 15 minutes till golden on top.
  4. Let the cookie cool slightly, add some maple syrup, coconut yogurt and fruit on top with a few crushed walnuts as well.

Tonga bean coconut yogurt

  1. When you prepare the yogurt to be sure to add the tonga beans when the yogurt has set.
  2. Remove the tonga beans and set the yogurt in the fridge.

Here’s to Autumn, if you are on the other side of the seasonal change. Be sure to serve this yummy breakfast with some passionfruit, raspberries, and honey. Even some candied Almonds will be greatly appreciated.
