Vegan edible sugar cookies are cookies that I have been wanting to make since forever. I have seen these pretty cookies almost more than a year ago and finally, I made them just in time for Mothers day. They take a bit of time to make, but they taste great and look just too pretty to eat!

Vegan Edible flower sugar cookies

Vegan Edible flower sugar cookies

Ingredients 

  • 3/4 cup tapioca flour or any other gluten free like spelt or rye
  • 1 1/4 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup coconut oil
  • 1 chia egg (1 tbsp chia seeds blended with 1/4 cup water)
  • Dried edible flowers
  • extra coconut oil
  • sugar for dusting

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Mix together the dry ingredients and set aside, rub in the coconut oil until it resembles bread crumbs.
  3. Then mix the chia egg and let it thicken, add this to the dough and mix until it comes together.
  4. Dust your kitchen counter with extra flour and roll out the dough and then press out the shapes for the cookies.
  5. Brush the cookies with melted coconut oil, press the dried flowers on top and sprinkle over the sugar.
  6. Place the cookies on a baking tray and then bake for 10-12 minutes until brown.
  7. Remove to cool and then store in a cool dry place.
