Two ingredient granola tarts are what’s on my breakfast table this mothers day. Since I will be celebrating Mothers day with my two boys, these cute little tarts will go down pretty well. If I say so myself. What makes these tarts so special is the fact they are made with just dates and Simply granola’s let’s get figgy granola.

Ingredients

  • One cup let’s get figgy granola from Simply granola
  • 4-5 medjool dates soaked in warm water for 10 minutes
  • Pinch of salt
  • One cup yogurt
  • Fresh fruit and berries
  • 1/4 cup slivered almonds
  • Honey or agave

Method

  1. Place the soaked dates and granola in a food processor or a highspeed blender and blend until the dough comes together.
  2. Add in the salt and pulse a bit more, then remove and spray the mini tartlets with non-stick spray.
  3. Preheat the oven to 175 degrees Celcius and then bake for 10 minutes until brown, leave to cool and then decorate with fresh fruit, almonds, mint and honey.
