I’m all for easy recipes, lately, or just always. Living with two men in my life means that I cook almost every day and being a food enthusiast means that I cook even double. My fridge is always stacked with loads of food to eat for me since these two just like all the deep fried, top of the cream kinds of foods. I have tried making lentil balls covered in Bbq sauce and to my dismay, there is just no win in my book.

So yes these glorious meals I enjoy over the weekend when my husband is working away or I add these veggies as an add in side dish for some extra greens on his plate. My son doesn’t even touch these guys, seriously some days I’m clueless what to do. So I guess there is more for me right, and having some extra spices in the cupboard makes it even easier, and that is what I need over the weekend. Hands up if you feel me!

So weekend I love you even more with an easy, nutritious meal packed with flavor and a glass of vino. I’m hosting a dinner party, any takers?

Tomato chili jam Cauliflower steaks

Tomato chill jam Cauliflower steaks

Ingredients 

  • Medium sized head cauliflower
  • One medium sized parsnip around two cups chopped
  • 1/2 cup coconut cream or milk
  • 1 1/2 tsp vegan butter
  • Olive oil
  • Two tsp @woolworths steak rub
  • 1 tsp @woolworths nigella seeds
  • 1/4 cup tomato chili jam
  • Salt and pepper
  • Toasted almond slivers

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Heat up some water and add the parsnip and some salt, let it come to a boil on medium heat until soft.
  3. Add the parsnip, vegan butter and coconut cream to a blender and blend until smooth and set aside until serving.
  4. Slice the cauliflower head through the middle and slice out the amount of cauliflower steaks you need.
  5. Drizzle over the olive oil, steak run, salt and pepper and bake for 15-20 minutes until golden and cooked through.
  6. Serve with the parsnip mash, nigella seeds and mix some of the tomato chili jam with warm water and drizzle on top with toasted almonds.
  • You can use other spice rubs if you don’t have and you can make your very own tomato chili jam or use an onion chutney or plum chutney if you keen. Even my beet chutney would go pretty good with this recipe.
