Easy lunch or light dinner option that can be changed according to what you have in your kitchen. AND who doesn’t love a crispy baked quiche out of the oven with a fresh side salad am I right?

Tomato basil quiche

Ingredients 

  • one round sheet of puff pastry (just read the ingredients list)
  • 400g silken tofu (see notes for substitutions)
  • 1 cup soaked cashews (see notes)
  • 100ml coconut cream
  • 1/4 cup nutritional yeast
  • 1/4 cup corn starch
  • 1 cup cherry tomatoes sliced
  • 1/2 tsp garlic flakes
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried basil
  • salt and pepper to taste
  • fresh basil leaves
  • pine nuts

Method

  1. Preheat oven to 180 degrees Celcius.
  2. Place the filling ingredients except for the tomatoes, pine nuts, and fresh basil in a high-speed blender and blend until smooth.
  3. Roll the puff pastry sheet out in to the quiche mould you like to use and pinch in the edges or slice off the extra pastry around the edges.
  4. Pour in the filling and decorate with the tomatoes, extra dried basil and a bit of salt.
  5. Bake for 20-25 minutes until golden and remove to cool before serving at room temperature with the fresh basil leaves and pine nuts.

Notes:

  • The silken tofu can be subbed with firm tofu
  • For a soy-free option, mix 1 cup of chickpea flour with 1 cup of water and use that along with the cashews, nutritional yeast, corn starch, and coconut cream.
  • soak the cashews in boiling water for at least 15 minutes
  • I used a whole wheat puff pastry, but you can use whatever you choose.
  • This quiche goes really well with other vegetables like pumpkin and spinach,  sweet potato and sundried tomato ect.
