Toasted hummus falafel pitas

Toasted hummus falafel pita's

Ingredients 

  • whole wheat pita’s
  • 1 cup chopped purple cabbage
  • 1 cup rocket or other salad leaves of choice
  • 1 cup roasted cumin and paprika chickpeas
  • 1 ripe avocado
  • 1 cup diced cherry tomatoes
  • 1 cup diced cucumber
  • 1 cup of My favorite Hummus

  • Vegan mayonaise or home made tangy cashew cheese sauce (see below ingredients list)

Tangy cashew cheese sauce

  • 1 cup raw cashews soaked in boiling water for thrity minutes
  • 2 tbsp nutritional yeast
  • 1 tbps lemon juice
  • 1 tbsp agave
  • 1 1/2 tsp chopped capers
  • salt and pepper to taste

Method

  1. Start by making the falafels according to the recipe and fry them in shallow oil unti brown.
  2. Toast the pitas, slice them open and smear a tbsp or two of the hummus in each toasted pita, add in the diced purple cabbage, salad leaves, sliced avocado, diced cucumber, cherry tomatoes, roasted chickpeas, falafels and the tangy cashew cheese sauce on top.
  3. Place all of the cashew cheese sauce ingredients in a high-speed blender and blend until smooth, place in the fridge until serving time.
  4. Freeze the rest of the falafels or use them in salads, store the cashew cheese sauce in the fridge for up to one week and use as salad sauce dressing, topp on to taco’s and baked fries.
