Almond and Coffee smoothie

Almond and coffee smoothie

Ingredients 

  • 1 frozen banana
  • 1 tub cottage cheese or greek yogurt (125ml)
  • 1 cup almond milk
  • 1 tbsp almond butter
  • 1 tsp coffee powder
  • 1 tbsp coconut
  • 1 tbsp honey
  • cinnamon powder

Method

  1. Blend all these goodies together and pour in to a glass. Decorate with muesli, extra almond butter, roasted almonds and roasted raisins (bake in the oven for 10 minutes at 180°C).

Simple Buckwheat Pancakes

Buckwheat pancakes

Ingredients 

  • 1 cup buckwheat flour (can be replaced by another flour)
  • 1 tbsp baking powder
  • 2 tbsp honey
  • 1/2 tsp vanilla essence
  • 1 egg
  • 1 cup almond milk
  • 2 tbsp coconut oil

Method

  1. Heat up your pan to medium to high so long and add a teaspoon of coconut oil.
  2. Mix together the dry ingredients and then rub in the coconut oil.
  3. Whisk together the egg, milk, honey and vanilla essence and pour into the dry ingredients.
  4. Mix well and when the pan is hot enough, scoop out 2-3 tbsp of the batter for each pancake.
  5. Wait till bubbles forms on the one side and then flip over till both sides are brown.
  6. For the almond butter syrup: mix together 1 tbsp almond butter, 1 tbsp honey and 1/4 cup almond milk.
  7. Eat with greek yogurt, fresh fruit, almond butter syrup and drizzle some coconut or sesame seeds!

Pink Chai Pudding Parfait with Quinoa Muesli

Ingredients 

Chia pudding

  • 2 tbsp chia seeds
  • 1 cup rice milk or almond milk
  • 1 tbsp coconut

Rhubarb and strawberry compote

  • 1 cup sliced strawberries
  • 1 cup sliced rhubarb
  • 1/3 cup honey
  • 1/4 cup lemon juice

Quinoa Muesli

  • 1 cup cooked quinoa
  • 1/2 cup coconut
  • 1/2 cup chickpea flakes or oats or quinoa flakes.
  • 1/2 cup mixed seeds
  • 1/3 cup sesame seeds
  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 1/3 cup peanut butter or almond butter (optional)

Method

  1. For the Chai Pudding: Mix all the ingredients, add honey and let it soak in the fridge overnight.
  2. for the Compote: Place all in a pot and let it simmer on low till soft. Place in a Maison jar in the fridge.
  3. For the muesli: Mix all the dry ingredients together. Melt the coconut oil and add the honey and peanut butter.
  4. Pour over the dry ingredients and then spread out on a baking tray.
  5. Bake for 15-20 min at 180degrees Celsius and then turn down towards 100 degrees celsius for 20 minutes.
  6. Store in a Maison jar in a cool dry place.
  7. How to ensemble the pudding: Layer with muesli, frozen raspberries, pomegranate seeds, chia pud and rhubarb & strawberry compote or mashed raspberries.
  8. Pretty and delicious!

Ingredients 

  • 1/2 frozen banana
  • 1 handful of spinach
  • 1 cup almond milk
  • 1 tbsp coconut
  • 1/4 cup coconut cream
  • 1 tbsp almond butter
  • 1 tbsp honey
  • vanilla essence
  • 1 passion fruit (decoration)

Method

  1. Blend all well and then pour into a newly empty strawberry jam jar. Decorate with passion fruit, coconut cream, and shredded coconut

Chocolate, Blood Orange and Chai seed Pudding

Ingredients 

Blood orange chia pudding

  • 1/2 cup blood orange juice
  • 1 tbsp chia seeds
  • 1/2 cup soy or almond milk

Choco smoothie 

  • 1/3 cup blood orange juice
  • 1/2 frozen banana
  • 1/2 cup chocolate coconut milk
  • 1 tbsp cocoa
  • Cinnamon

Raw chocolate

  • 1/3 cup melted coconut oil
  • 1/3 cup cocoa
  • 1/4 cup honey

Method

  1. Mix the Chai pudding ingredients together and place in the fridge overnight.
  2. Blend all the smoothie ingredients together and set aside.
  3. Raw chocolate: Mix well and dollop a few teaspoons of cashew butter or any other nut butter on top.
    Pour into your mold and place in the fridge overnight. Make shavings with a spoon when set.
  4. Layer all these layers and decorate with the raw chocolate and fresh slices of blood orange

Amaranth Porridge with stewed plums

Amaranth Porridge with stewed plums

Ingredients 

Amaranth porridge

  • 1 cup dry amaranth
  • 2 cups water
  • Stir in: 1/2 cup coconut
  • 1 cup coconut milk/almond milk
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 1/3 cup honey or coconut sugar

Stewed plums 

  • 1 cup sliced plums
  • 1/3 cup honey or coconut sugar
  • 1 tbsp lemon juice

Method

  1. Amaranth Porridge:  Microwave for 25 minutes, stirring every now and again. Add more water if needed and salt right at the end.
  2. The consistency should be gooey and smooth.
  3. Stewed Plums: Place in the microwave or on the stove for 5-10 minutes on high till soft. Amaranth can be replaced by quinoa.
  4. Serves 2-3 people

Oat Banana Waffles Coco whip cream and Strawberry Compote

Ingredients 

Waffles

  • 1/2 mashed banana
  • 1/2 cup oats
  • 1 tbsp rice/Soy/ any other flour
  • 1/2 tsp baking powder
  • dash of salt
  • dash of cinnamon
  • 1/4 cup honey
  • 1 cup milk of your choice

Strawberry  Compote

  • 1/2 cup sliced strawberries
  • 2 diced mint leaves
  • 1 tbsp honey
  • 1 tsp lemon juice

Coconut cream 

  • 1 can of coconut cream (left in the fridge overnight)
  • 1/2 cup coconut sugar or brown sugar
  • drop of vanilla essence

Method

  1. Waffles: Mix all these ingredients together (add more milk or flour to get the desired consistency) and then pour in an oil smeared waffle tray or machine.
  2. Let it cook till fluffy and brown.
  3. Makes two small waffles, double the recipe for more! If you don’t have a waffle maker, make pancakes with the same recipe!
  4. Strawberry Compote: Mix all these ingredients together and leave it for a few hours to create a syrup or squash the strawberries to get some of the juices out
  5. Coconut Cream: Whisk the coconut cream the next day in a cooled mixing bowl, beat till the cream becomes stiff before adding in the sugar and essence.
  6. Beat a little longer till fully incorporated. Serve with warm waffles and cool compote

Strawberry and Lime smoothie

Ingredients 

  • 1/2 frozen banana
  • 3-4 strawberries frozen or normal
  • 1/4 lime or 1 Tsp lime juice
  • 1 tbsp cashew butter
  • 1 cup coconut milk or almond milk
  • 1 tbsp dried coconut
  • 1 tsp honey

Method

  1. Blend till smooth and decorate with all the goodies your heart desires! Add more honey or lime.

Cookie dough smoothie and Rawtella balls

Cashew Cookie dough smoothie

Ingredients 

  • 1 cup almond milk
  • 1 tbsp cashew butter
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • 1tbsp honey
  • vanilla essence
  • salted cashews

Rawtella Balls

  • 3/4 cup hazelnut butter (or cashew butter)
  • 2 cups shredded coconut
  • 4 mashed dates
  • 1 tsp coconut oil
  • 1/2 cup roasted buck wheat
  • 1/3 cup cocoa
  • Vanilla essence
  • pinch of salt
  • Splash of almond milk

Method

  1. Smoothie: Blend it all together and decorate with cashews and your rawtella balls
  2. Rawtella balls: Mix all these ingredients together and then roll into balls and then in some extra coconut!
  3. Dunk a few in your smoothie!

Gluten-Free “Melkkos” Porridge

Ingredients 

Cinnamon spiced “Melkkos”

  • 1/2 banana
  • 1 1/2 tsp soy flour or oat flour
  • 1 tbsp honey
  • 1/2 cup almond milk
  • 1 tsp almond butter or peanut butter

Blueberry compote 

  • 1/2 cup blueberries
  • 1 tbsp lemon juice
  • 1 tbsp honey1/2 tsp chia seeds
  • 1/2 tsp cinnamon

Peanut brittle

  • 1 cup salted peanuts
  • 1/2 cup honey
  • saltPinch of nutmeg

Method

  1. For the Gluten-Free porridge: Mash the banana and add the rest of the ingredients. Place in the microwave or in a pot on the stove till cooked
  2. Blueberry Compote: place all the ingredients together and let it cook on the stove or in the microwave for 2 minutes till gooey and soft
  3. Peanut Brittle: Place all these ingredients in an oven proof dish. Let it bake for 10 minutes and then immediately pour onto a parchment paper lined cutting board and let it set in the fridge.
  4. Place all these goodies in a bowl and eat to your heart content!
