Tahini granola clusters

Tahini granola clusters are beautiful with coconut yogurt and these lovely sweet poached pears. I make a batch of granola almost every other week, just because I love it so much and let’s be honest it’s so addicting. To make your own granola or muesli are so worth it, because you just know everything that’s in there. Plus when you get to make a new batch every week, you get to experiment with different tastes and flavor combinations.

I recently got into poaching pears, and I promise you it’s the best thing ever. I always thought they must be so hard to make, but it’s seriously so easy and super delish! I got into cooking pears, when I started to make compote for my little one. Blended cooked pears and apples, so so good! The texture of the pear just melts away and the creaminess of the yogurt compliments it so so well. Plus this slightly bitter granola with the hints of the dried figs is just perfect for a quick Autumn breakfast.

Tahini granola clusters

Ingredients 

  • 2 cups oats
  • 1 cup shredded coconut
  • 1/2 cup quinoa pops
  • 1/2 cup rice flakes or 1 cup all bran flakes
  • 1/2 cup buckwheat groats
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup flax seeds
  • 1/4 cup chopped figs
  • 1/4 cup dried cranberries
  • 1/3 cup almond butter or tahini
  • 1/3 cup coconut oil
  • 1/2 cup agave or honey
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder

Tonka bean & cinnamon poached pears

  • 2 pears
  • 3/4 cup water
  • 3/4 cup agave or honey
  • 2-3 tonga beans
  • 1/2 tsp cinnamon
  • 3-4 tonka beans
  • Pinch of salt

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Mix together all the dry ingredients except the dried figs and the dried cranberries.
  3. Heat up the coconut oil and then add the tahini and agave, mix well and heat up for another one minute or so in the microwave.
  4. Pour over the granola, mix well with a wooden spoon until everything is covered and then, pour into a parchment paper lined baking tray.
  5. Bake for 25-35 minutes, tossing over with the wooden spoon, until the granola is brown.
  6. Add the chopped figs and the dried cranberries, leave to cool completely and then scoop into a glass container.

Poached Pears 

  1. Slice and decore the pears and brush on lemon juice while you heat up the rest of the ingredients over medium heat.
  2. Let it start to bubble and add the pears, letting them simmer on low for about an hour.
  3. Serve with the granola clusters, coconut yogurt, pomegranate, and extra syrup.

Notes:

  • You can sub the quinoa pops for rice pops or just leave them out.
  • The tonka beans can be subbed with any other spices like, star anise or vanilla sticks.
