Fluffy Spelt pancakes with quince blackberry compote are gonna be hard to beat. These oh so fluffy heavenly pancakes are just magic combined with the tangy blackberry quince compote. We are such pancake lovers in our house. Since eating a decent breakfast in a small town in the south of France we have to settle to drive a whole hour to get a decent breakfast.

Curry Lentil Chickpea pancake is my retake on the Oh she glows giant chickpea pancake that I made a couple of years ago and absolutely fell in love with. Its dough, chewy and filled with protein goodness. I love to use garbanzo flour quite a lot in my kitchen- in stews, quiches, pastry dough, cookies etc. It has a unique taste and does not go as well with sweet dishes, but aces savory!

Quickly baked falafels are super duper easy to make and sooo easy to eat as well. I have been trying out eating plant-based and it's been nearly two weeks. I don't eat that much meat in general and haven't been eating dairy for up to two years. After skipping meat for these plant-based goodies, I have to say I feel pretty good! These falafels are so easy to make and are very filling, so meat is really not missed over here. I might just do this for real.

Milktart Crepes have become my ultimate favorite way to eat crepes. Even though Nutella coconut filled crepes right next to the Ifle tower is hard to beat. Crepes with a view can be anyone's favorite am I right? No matter what they taste like. Now you don"t have to go all the way to France to experience good enough crepes. I combined the much loved French dessert with a well-known favorite in South African. One thing that we have in common is that we love crepes too. I guess that I am finding more and more similarities to cure the "missing home" blues.

OH SO SWEET Vegan meringues have seriously surprised me. What do these vegan (dairy & Animal free) meringues entail- chickpea brine? First of all, I thought these would taste pretty weird because of the whole using chickpea brine and all, but I have to say they taste pretty good. Almost like regular meringues to be honest and the bonus adding of rose water extract just added that extra bit of flair that every meringue needs.

Wholehearted healthy rusks will have to do to cure the winter blues. Since it's the month of February and all, snuggling up with these or your other half is kind of obligatory. These are just one of my all-time favorite things to eat night or day, meal or snack. If you don't know about rusks then, you're missing out. It's basically baked sweet bread, dried out and generously dipped into a steaming mug of coffee.

Mushroom Spinach waffles are just YUM. We recently purchased a Tefal snack collection toaster that can do the works like yum toastees, muffins, donuts and Waffles. The sucky thing is that you have to buy the other plates for the donuts etc, but I just love the functionality of an appliance that can do so much. So that's why I certainly can vouch for this product. I can't wait to buy the donut plates so I can bake some donuts already! My son's first birthday and I am already undecisive between a waffle or donut bar? Choices, choices...I have forgotten how much I love the crunchy bite of a fresh waffle. Now I made these with chickpea flour that needs no eggs to get them combined. I just love Chickpea flour. It has a unique taste, but it's seriously so good and loaded with protein.

Chocolate tahini cranberry brownies are delectably sweet and perfect for an afternoon treat. Goey, chocolaty and tangy sounds about right, right up my ally that is! What is it about chocolate, coffee and stranger things that have me hooked? They all resemble a little bit of me time when baba has gone down for his afternoon nap. I won't ramble on about these yummies because you'll just have to make them for yourselves to try. I don't know what it is, this weather, the rain or what that makes me crave chocolate so much lately. It has been this bad since my son has been born and he is almost a year. One more month to go- that's crazy!!

These ten dinner ideas have literally saved me a couple times. Dinner was on the table almost every night thankfully due to these easy recipes. Becoming a mother has been a full-time job and other duties like cooking took a backseat for a while, but once I got into the groove of being a mother and a wife it all just seemed a bit more effortless. Come and have a look at my summary of the last seven months of motherhood and of course some yum recipes to try for yourself!

Vegan coconut Milktart is the real deal, I assure you. Can you make this beloved dessert healthy? Yes indeed. It's a traditional dessert that resembles something close to a custard flan. In my house, I try to healthify a few recipes, even though I do love the old favorites just the way they are. I love coconut milk and have a few cans lined in my cupboard to whip up something when the time calls for it.
