Fluffy cinnamon pancakes are perfect for a quick Sunday brunch. I always make a big batch of pancakes so I can stow some in my freezer ad a breakfast option or a snack for my little munchkin. Squash blossom spelt pizza is a lifesaver this week, just because I am pretty tired this week. It's gluten-free, healthy and easy to whip up for a couple of meals...It has been a long time since we have seen the sunshine and particularly this season we are hanging around a bit longer before we are heading home for vacation. So the reasons why I am tired is because my husband is away a lot recently and because my son has been heading into his one nap a day...I did not realize that meant if he napped, then well, that's it for the day...

Lentil hand pies are that kind of snack that you can have any time of the day, especially when it's combined with this amazing tangy tomato sauce. I made a huge batch of lentil bobotie and I seriously can't get enough. It's so tasty and keeps me full for quite some time.
