Cinnamon praline pumpkin brioche loaf is just what the doctor ordered this week. It's October folks and now I'm officially getting into the swing of the full autumn spirit. Autumn is such a wonderful time of the year, its sunny, and makes me think of warm winter days with a sweet cup of tea in hand. The perfect date to this tea goûter will be a fresh slice of cinnamon bread of course, so this loaf is just absolute perfection.

Coffee fig muffins are the perfect way to start these cozy mornings. They are somewhat between a healthy muffin and a scrumptious piece of cake. I love the crunch of the hazelnuts and the bits of dried figs in between every bite. With a steaming cup of JO, every morning will start off great!

Super spinach falafel bowls are coming to my rescue this week. It has been a week post vacation and while winter is in full swing I haven't gotten the hang of the cold just yet. Neither has my son, and he is not a happy camper when the flu bug has gotten a hold of him. This ever so nourishing bowl was absolutely delish and I have fallen in love with these super easy falafels.

Tahini granola clusters are beautiful with coconut yogurt and these lovely sweet poached pears. I make a batch of granola almost every other week, just because I love it so much and let's be honest it's so addicting. To make your own granola or muesli are so worth it, because you just know everything that's in there. Plus when you get to make a new batch every week, you get to experiment with different tastes and flavor combinations.

Pumpkin fritters are vegan and oh so delicious! I was so surprised by these fritters that I made them two days in a row and even my better half could not tell the difference. They are crunchy on the inside and super soft and chewy. They remind me so much of my mother's pumpkin fritters that we would have for Sunday lunch and I think even she would say that they are tasty.

Rainbow carrot butternut soup is super amazing and so nutritious. The season has come for warming soups and I absolutely love the fact that you can have a nutritional meal within half an hour or so. I made a batch of this lovely soup last week and I finished it in almost a day's time. I served this soup with a soft and chewy bread with a flavor punch, which was super amazing!

Walnut oatmeal Pizookie can lift anyone's mood. It's a giant cookie slash pizza for breakfast. Crispy baked and topped off with maple syrup and generously served with tonga bean coconut yogurt. I added some fall fruit and they tasted delish, but you can add whatever fruit you like. Even some chocolate will be advised...
