Super spinach falafel bowls

Super spinach falafel bowls are coming to my rescue this week. It has been a week post vacation and while winter is in full swing I haven't gotten the hang of the cold just yet. Neither has my son, and he is not a happy camper when the flu bug has gotten a hold of him. This ever so nourishing bowl was absolutely delish and I have fallen in love with these super easy falafels.

Tahini granola clusters are beautiful with coconut yogurt and these lovely sweet poached pears. I make a batch of granola almost every other week, just because I love it so much and let's be honest it's so addicting. To make your own granola or muesli are so worth it, because you just know everything that's in there. Plus when you get to make a new batch every week, you get to experiment with different tastes and flavor combinations.

Pistachio orange bundt cake is a beautiful subtle spiced cake with hints of pistachio and orange. I absolutely love the texture of this cake. The nutty flavors just add such a grainy yet light spring to this delectable mini bundt cake. The frosting is undeniably perfectly tangy and breaks the too much sweetness overall.

Pumpkin fritters

Pumpkin fritters are vegan and oh so delicious! I was so surprised by these fritters that I made them two days in a row and even my better half could not tell the difference. They are crunchy on the inside and super soft and chewy. They remind me so much of my mother's pumpkin fritters that we would have for Sunday lunch and I think even she would say that they are tasty.

Rainbow carrot butternut soup

Rainbow carrot butternut soup is super amazing and so nutritious. The season has come for warming soups and I absolutely love the fact that you can have a nutritional meal within half an hour or so. I made a batch of this lovely soup last week and I finished it in almost a day's time. I served this soup with a soft and chewy bread with a flavor punch, which was super amazing!

Harvest breakfast tarts are a super easy breakfast alternative when you're just not feeling like oats. It takes ten minutes to prepare and is super delish and very healthy too. You can even use these tarts as a healthy dessert too, so it's def a win in my book!

It stores pretty well too for a leftover alternative and fills all the holes and gaps for comfort food goodness that the winter creates. Not only is it so easy to prepare, but also a budget saver. This lasagne can go pretty far with a whole roasted butternut, couple slices of whole wheat pasta sheets and creamy bearnaise sauce.
