Pumpkin cilantro falafel bowls

Pumpkin cilantro falafel bowls are my official first recipe for this season.  Autumn is just a couple days away, and that means that all things comforting, filled with layers and goodness is on its way. These falafels are just the perfect intro into one of my favorite times of the year. I love the change color of the leaves, the smell of spices and the slow mornings even more so than spring. The colors are just so inspiring and it just brings out the hues of my soul.

Super spinach falafel bowls

Super spinach falafel bowls are coming to my rescue this week. It has been a week post vacation and while winter is in full swing I haven't gotten the hang of the cold just yet. Neither has my son, and he is not a happy camper when the flu bug has gotten a hold of him. This ever so nourishing bowl was absolutely delish and I have fallen in love with these super easy falafels.

Sweet potato lentil falafels are my new quick meal dinner addition. I have been through some cookbooks, apps ect. and there are sooo many to choose from. Where do you start? What to make when you have some time to meal prep, but you don't go overboard in the kitchen. These sweet potato lentil falafels are easy, minimal ingredients and super satisfying!

Quick baked falafels

Quickly baked falafels are super duper easy to make and sooo easy to eat as well. I have been trying out eating plant-based and it's been nearly two weeks. I don't eat that much meat in general and haven't been eating dairy for up to two years. After skipping meat for these plant-based goodies, I have to say I feel pretty good! These falafels are so easy to make and are very filling, so meat is really not missed over here. I might just do this for real.
