Eggplant butter bean stew is the perfect in-between season's dish. It's super creamy, filling, and loaded with so many flavors and textures. Slightly less sunny days on the horizon, layers of clothing, and cozy evenings lead to a warming bowl of plant-based deliciousness. This is the perfect dish!! 

Creamy baba ganoush dip

Creamy baba ganoush dip is THE dip I'm obsessed with right now, not only is it so creamy, full of flavor and super easy to make. It's topped with sumac and harissa roasted carrots, toasted pine nuts, and dried cranberries plus it has that added protein boost of butter beans in between the mix. It will make any eggplant hater turn in to it's nr one fan and I was one of those haters mind you and now, I can't get enough.

Eggplant lasagne is a dish that's a bit on the lighter side of the traditional one that we all know and love, but certainly fills the gaps of comfort, nutrition, and protein. I have made this dish with just plants and it's certainly one of my very favorite main plant-based dishes thus far.

Ratatouille tart

Ratatouille tart is the perfect ending to summer. The fresh tomatoes are in abundance right now and it's so hard to believe that summer is coming to an end. I totally love tomatoes and I have made a few versions of a tomato tart, but this version is very french inspired. Ratatouille is a typical french dish that is found as a side to various dishes.
