No knead Zucchini bread

No knead Zucchini bread is such an amazing bread recipe to try when you are pressed for time or when you just want to make some freshly baked bread in a jiffy. I made this for us one evening when we were planning to have a BBQ. It took me around a half an hour to prepare everything and by the time the BBQ was ready, the bread was ready to be eaten.

I have been in a creative slump for a couple days. I just have been feeling meh, and tired after having my sister and her two kids here. It was havoc in my household. Having family or any guests are so good, because the obvious fact, kids can play and learn and keep each other occupied. The work, though, does not end...I still have to learn to relax a bit, I am doing that now more when my sweet munchkin is napping. How do mothers do it all? I ask once again...?

Lately, we have been firing up the BBQ almost every second night and that is a regular when you live in South Africa. Some families BBQ almost every night, just because it is so social, and we are pretty social people. It has been quite a change when we moved to France because first of all BBQing for yourself is not a lot of fun, haha and secondly what do you make with the meat that you can eat with the leftovers the next day? Spring dutch baby is a quick and easy lunch that I could whip up in a jiffy. I have to hungry men in my household, so I have to make sure that the meals I make are healthy, filling and fresh. Not that they don't know how healthy these meals actually are, I sneak a few key ingredients like feta to cream things up so they don't tell the difference.
