Chickpea tofu ramen

Chickpea tofu ramen, I mean every day like in every day I could eat this! This whole plate is just the right amount of crunch, flavor and super packed with nutrition. I have been craving both these last past weeks, something comforting and light and this ramen just covers all the cravings.

Summer socca

Summer socca is the epiphany to easy lunch that can look like a fancy lunch. It can be your secret when you need to make something quick, healthy and scrumptious. I have been in a creative slump for a couple days. I just have been feeling meh, and tired after having my sister and her two kids here. It was havoc in my household. Having family or any guests are so good, because the obvious fact, kids can play and learn and keep each other occupied. The work, though, does not end...I still have to learn to relax a bit, I am doing that now more when my sweet munchkin is napping. How do mothers do it all? I ask once again...?

Sweet potato zucchini frittatas was a quick and easy lunch that I just whipped up in a jiffy. I actually saw an amazing sweet potato zucchini loaf from Donna Hay and I wanted to recreate it. Pinterest is such a great tool to find what you're looking for or what you're not looking for...But somehow find a use for it. All this baking is leaving my stocked fridge pretty stacked and not a lot of time to eat it all, or it's not necessarily the time, but the waistline that doesn't allow it.

OH SO SWEET Vegan meringues

OH SO SWEET Vegan meringues have seriously surprised me. What do these vegan (dairy & Animal free) meringues entail- chickpea brine? First of all, I thought these would taste pretty weird because of the whole using chickpea brine and all, but I have to say they taste pretty good. Almost like regular meringues to be honest and the bonus adding of rose water extract just added that extra bit of flair that every meringue needs.
