Sweet potato mac cheese

Sweet potato mac cheese

Ingredients 

Sweet potato cheese sauce

  • 1 medium sweet potato peeled and diced
  • 3/4 cup cashews
  • 1/4 cup nutritional yeast
  • 1/2 cup coconut milk
  • 1 1/2 tsp white miso paste (optional)
  • 1/2 tsp garlic flakes or 1-2 garlic cloves
  • Salt and pepper to taste
  • fresh basil leaves
  • Pasta of choice

Method

  1. Start by cooking the pasta in boiling water with some salt and a dash of oil. 
  2. While the pasta is cooking, place the diced sweet potato and cashews in a pot on the stove and cover it with water, bring to a simmer until the sweet potato is cooked through. 
  3. Once cooked, place the soft sweet potato, cashews, nutritional yeast, coconut milk, miso paste, garlic flakes, salt, and pepper with 1/2cup to 1 cup of water in a high-speed blender (depending on how thick you like it).
  4. Blend until smooth and once the pasta is al dente, drain and drench with the sweet potato cheese sauce. 
  5. Let it simmer a few minutes more and serve with the fresh basil leaves and toasted bread crumbs. 

Notes:

  • A variation of herbs can be added into the cheese sauce, like dried sage and thyme.
  • Potato can be used with the sweet potato for a more “white” sauce.
  • The rest of the sauce can be stored in a glass container in the fridge for up to three days.
  • Use the rest of the sauce to serve with potato wedges as a dipping sauce.
