Sweet pea hummus

Ingredients 

  • 2 cups canned and drained chickpeas
  • 1 cup defrosted sweet peas
  • 1 tbsp tahini
  • 1/4 cup good quality olive oil
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • salt and pepper
  • Roasted almonds and sesame seeds for serving
  • Mint leaves for decorating

Method

  1. Place all of the ingredients in a high-speed blender and blend until smooth.
  2. Decorate with roasted chopped almonds, sesame seeds and fresh mint leaves.
  3. Serve with crackers and sliced cucumber.

Notes:

You can even add a couple mint leaves for a minty sweet pea hummus.
