Summer potato salad is just a perfect combo when evenings are being spent outside. Lately, we have been firing up the BBQ almost every second night and that is a regular when you live in South Africa. Some families BBQ almost every night, just because it is so social, and we are pretty social people. It has been quite a change when we moved to France because first of all BBQing for yourself is not a lot of fun, haha and secondly what do you make with the meat that you can eat with the leftovers the next day? BBQ and potato salad goes together like coffee and milk (if there is a better comparison, well than that’s how it’s like.) In SA we like to make our salads pretty decadent, meaning they are loaded with mayo, eggs, and even pickles. Traditionally speaking, it’s pretty delish, but when you’re having a barbie with loads of meat…it’s kind of heavy for summer, I would say. I love this salad because it has so many flavors and textures within every bite. Creamy, yet tangy, dense yet light. The plum gives that extra sweetness, whereas the radish adds a bit of bitterness. See where I am getting at here?

Our BBQ has certainly changed since I have tried being vegan. Oh and what a challenge it was back home over the break, veganism is definitely a new concept, so the options are quite scarce. I ate a good amount of roasted veg, soup, and roasted corn when I was there. My husband eats a whole lot of meat, just because he has a pretty physical job and obviously because he likes it. I have been trying to sub the meaty ones for vegetable skewers, roasted siracha corn,  pesto portabello mushrooms and french stuffed loaf bread with fig jam and vegan cheese. Sounds pretty delish right? BBQ vegetables are really delicious and super easy. Just rub some pesto on the veg along with some olive oil, salt, and pepper and you’re ready to go.

I absolutely adore this recipe and will certainly make it again for our next BBQ. It might even become a new family favourite just yet!

Ingredients 

  • Two cups of young potatoes (500g)
  • 1/2 cups sliced radishes
  • 1 avocado
  • 1/2 cup sliced cucumber
  • 1/4 cup fresh sweet peas
  • 1 -2 small plums
  • 1/4 cup olives
  • fresh rosemary
  • Olive oil

Vinaigrette

  • 1/2 cup coconut milk or cream (depending on how creamy you like it)
  • 1/4 cup honey or maple syrup
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper

Optional add in’s

  • vegan mayo
  • Capers
  • sundried tomatoes

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Rince the potatoes and a few incisions with a knife in each potato before placing in a microwavable dish with a little water and some salt.
  3. Microwave on high for 10 minutes, this will allow the cooking process to go faster.
  4. Meanwhile, clean the radishes and destem them, slice in quarters and then place on a baking tray.
  5. Once the potatoes are done, remove to cool slightly before slicing them into slices or quarters, place on the baking tray with the radishes.
  6. Season with salt, pepper and olive oil. Place some fresh rosemary on there plus a squeeze of lemon juice and roast for about 20 minutes till brown.
  7. Meanwhile, slice up the rest of the ingredients and mix together the vinaigrette.
  8. When the potatoes are done, remove to cool and then mix everything together (remove the rosemary leaves).
  9. Drizzle over the vinaigrette and serve with the rest of your BBQ ingredients.
