Strawberry Rhubarb hand pies have been my saving grace yesterday, just coz we woke up with no power and a semi-dark house for almost the entire day. This was my worst, luckily I made a batch of these super crispy, refined sugar-free, delightfully sweet hand pies that helped me through my day of trail. My conclusion after a pretty hard and long day of nothing simply is gratitude. Gratitude for all the “luxuries” I take for granted every day, these mini pies included.

This sounds seriously so stupid. I know, but yesterday made me realize how fortunate we are to have running water and electricity. I felt useless without light and electricity for a cuppa joe. I really needed some caffeine, more than I thought I would. I drove all the way to the local coffee spot to get a double coffee creme.

So these hand pies are traditionally made with apricot jam, and I’ll get around to doing them (hopefully) when the season finally starts. I absolutely love love strawberries and I am so happy that the season for these luscious fruits is here and the perfect partner is rhubarb. I never tried rhubarb before we moved to France and I have to say I have been so surprised by the amazing taste it brings to food.

The jam-like texture it brings to sweet desserts is unforgettable! I haven’t tried any savory dishes with Rhubarb before, but I’m sure it ads’s so much flavor. Normally pie is filled with fresh fruit, but I found the already sweet filling was a perfect combo with the crunchy crust of these pies.

Strawberry Rhubarb hand pies

Strawberry Rhubarb hand pies

Ingredients 

  • 3/4 cup Spelt flour
  • 3/4 cup all-purpose white flour
  • 75g cold set coconut oil
  • 1 1/2 tsp coconut sugar
  • 1/2 cup cold water

Filling

  • 1/2 cup sliced and washed Rhubarb
  • 1 Cup chopped strawberries
  • 1/4 raspberries
  • 1/3 cup agave or maple syrup
  • 1 1/2 tsp lemon juice
  • 1/4 tsp salt

Method

  1. Mix together the dry ingredients and then rub in the coconut oil with your fingertips until it resembles bread crumbs.
  2. Then add in the water gradually until the dough comes together, roll out the dough, sprinkle over some flour and fold over a couple times like an envelope.
  3. Then roll out finally about half a cm in thickness and press out round shapes for the hand pies with a glass or a cookie press.
  4. Scoop out one tsp of strawberry rhubarb filling on to the one side of the pie, (makes sure not to overfill otherwise the filling pops out) wet the edges with your fingertips and then press the edges flat with a fork.
  5. Brush the pies with melted coconut oil and sprinkle over violet sugar or extra coconut sugar.
  6. Bake for 25 minutes until brown and oozing jamminess.

Strawberry Rhubarb filling

  1. Place all the ingredients in a pot on the stove and bring to a simmer until jammy, let it cool and then place in the fridge in a glass container.
