Squash blossom spelt pizza is a lifesaver this week, just because I am pretty tired this week. It’s gluten-free, healthy and easy to whip up for a couple of meals…It has been a long time since we have seen the sunshine and particularly this season we are hanging around a bit longer before we are heading home for vacation. So the reasons why I am tired is because my husband is away a lot recently and because my son has been heading into his one nap a day…I did not realize that meant if he napped, then well, that’s it for the day…

Well contrary to the downside there is quite more upside to all of this. I get to spend more quality time with my son. That has been something we have been disputing lately. I think my son is more of a daddy’s boy than a mommas boy… He says dada just when he wakes up first thing in the morning and he has even been calling me dada for some time. Come on, I’m mom. You were in my tummy for nine months and then I breastfed you for like 9 months after that…Seriously.

As a stay at home mom, I have to tend to all things at home while my son is here so I don’t get to spend as much “quality time” as dad does when he gets home for an hour or two. So obviously I have to even the scale. I just decided to do what we both do best and eat together…it’s a win-win!! Good food and moma lovin, what more could a boy want?

I have realized that we have elderflowers growing just basically everywhere. I made a batch of elderberry syrup last night and it has a strange taste to it, but once it is sweetened with agave it’s amazing! I added it to some chia seed pudding this morning and it’s just yum. Actually, I don’t know that much about edible flowers so (after I picked lilacs and didn’t know what this amazing smelling flower was- I threw it away after a while) HERE  is a list of edible flowers, if you live in France so you might know all the goodies all around you!

I sooo am into ice cream right about now, so elderflower ice cream might be on the menu this week. I better wiggle my toes, because we might be heading on vacation pretty soon. That means that I might be missing our beautiful cherry tree n bloom or the fig tree in our neighbors garden…it’s so sad! But I’d rather see my family and celebrate my 30th. EEEk yes!

Squash blossom spelt pizza

Ingredients 

  • 2 1/2 cups spelt flour
  • 1/4 cup polenta
  • 1 cup lukewarm water
  • 1 1/2 tsp active dry yeast
  • 1/2 tsp salt
  • 1/2 cups squash blossoms
  • 1/2 cup sliced peppers and red onions sauteed
  • 1/2 cup sauteed zucchini
  • 1/2 cup sauteed brown mushrooms
  • 1/4 cup sweet red peppers (found at Auchan) or pepperdews
  • 1/3 cup confit tomatoes or sundried tomatoes
  • 2/3 cup tomato paste
  • Salt and pepper
  • Oregano
  • Paprika
  • 1/2 cup vegan cheese or mozzarella
  • 1/4 cup pine nuts

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Mix together the yeast and the lukewarm water and then sift together the flours, salt, and sugar.
  3. Mix the wet into the dry until the dough comes together. Set to rise, covered in an oiled bowl for about 30 minutes to one hour till it has doubled in size.
  4. Roll out the dough on a floured surface and then sprinkle over the polenta to ensure a crispy crust.
  5. Add the tomato paste, vegetables, squash blossoms, vegan cheese and pine nuts.
  6. Bake for 25-30 minutes till crispy, remove and serve warm with fresh rocket leaves and balsamic drizzle.
