Not that they don’t know how healthy these meals actually are, I sneak a few key ingredients like feta to cream things up so they don’t tell the difference.

I don’t know how moms do it all the time week in and week out. Finding inspiration to cook healthily gets pretty hard after a while. I was in a slump now for a bit when I went to visit my sister in Geneva and I realized that what I was cooking for our son is not up to scratch. I have given him so many “alternative healthy” meals but in reality, they weren’t healthy at all.

They are living a mostly vegan lifestyle with the exception of a piece of cheese every now and again. Her children are healthy, plump and happy and that got me thinking. Would he miss anything? That, of course, would be a big no-no to our South African culture, because we thrive on meat and love a good old barbeque.

I am trying to go plant-based and caffeine free for a while and I have to say I feel pretty great! My sister told me about pick up limes blog and they give you pretty good insights on how to start a plant-based diet. I have always been confused with the ratios on how not to eat too many carbs or too many fats.

I have had a fear of eating too many carbs and I don’t know where that fear has come from, maybe somewhere in my teenage years I just decided that carbs are the enemy. Now with a plant-based diet, whole wheat and whole foods are key. Don’t get me wrong, I love protein and have thrived on it so many years, but there are so many reasons not to eat meat.

Spring dutch baby

Ingredients 

  • 3 eggs
  • 2 tbsp of gluten free flour of your choice (I used buckwheat)
  • Splash of milk
  • 1/2 cup Mushrooms
  • 1/4 cup red onion
  • 1/2 tsp dried sage
  • 1/2 mashed avocado
  • Fresh peas
  • 1/4 cup cubed feta
  • Lemon juice
  • Salt and pepper
  • Fresh Thyme

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Heat up a skillet and then saute the onions and mushrooms till the onions are nice and translucent.
  3. Blend together the eggs, flour, milk, spices, salt, and pepper together until frothy.
  4. Pour into a round cake tin (sprayed with nonstick spray) add the onions and the mushrooms and then bake for 15-20 minutes till nice and puffy.
  5. Remove and serve with fresh avocado, lemon juice, feta, peas , fresh salt, pepper and thyme on top.
