Spicy Thai chicken stirfry

Spicy Thai chicken zoodles stirfry is my love declaration to Thai cuisine. I have always loved story and I guessed I had it all in the bag, I mean all you have to do is just fry some chicken and veg and load up some sweet and sour sauce from the supermarket. Man, did I not know what I was missing. My husband thought that is all I could make. (so he did marry me for love after all, because I would make it on a regular. Just because it’s always a go to when you don’t know what to make, and then it gets pretty stale after a while. So this a great way of mixing it up. This is your game changer when it comes to stirfry.

So going low carb might mean that you are eating more whole foods loaded with vitamins that are great for your body. I find that I eat more when I eat like this, but adding good carbs to the mix is good too. Cutting it out completely is kind of impossible since there are carbs in vegetables and fruit too.

But who can say no to a warming bowl of goodness where all the tastes collide and the textures work in harmony. With every bit, you know that you are nourishing your body to the max. I serve this dish with soba noodles for my husband because he needs a lot of carbs to keep him going. I love to eat a variety of vegetables and this is one way of adding all of the things I love into one bowl.Since summer is right around the corner, I’ll be making this one on repeat!

Spicy Thai chicken zoodle stirfry

Spicy Thai chicken stir fry

Ingredients 

  • 2 medium-sized chicken breasts
  • 1 large zucchini
  • 2 medium-sized carrots
  • 1/2 red onion
  • 1/2 cup cherry tomatoes
  • 1/3 cup salted cashews
  • 1/3 cup cornstarch
  • 1/4 cup polenta
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/2 garlic flakes or 1-2 crushed garlic cloves
  • Olive oil
  • Salt and pepper

Spicy Sauce

  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 1/4 cup maple syrup
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic powder
  • 1/2 tsp chili paste or chili powder
  • 1 tsp sesame seeds (toasted if you prefer)
  • 1 tsp corn starch

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Slice the chicken breast into strips and then mix the corns starch, polenta, spices,  salt, and pepper together and roll the chicken in this flour mixture.
  3. Place the tomatoes and onions on a baking tray and drizzle over olive oil, salt and pepper and garlic flakes. Bake for 15 minutes at 175 degrees Celsius.
  4. To ensure that the chicken is covered enough, whisk one egg and dip the chicken after the first roll in the egg and again in the flour mixture.
  5. Slice the zucchini and carrot very fine or use a spiralizer (you can buy it here) to spiralize your veg.
  6. Start by frying the chicken in a hot skillet till nice and crispy, remove before adding some more olive oil for the veg.
  7. Add the zoodles and lightly fry, whilst adding salt, pepper and some of the spices from the chicken.
  8. When the vegetables are still al dente, add half of the sauce, remove to serve with chicken, roasted tomatoes, onions, salted cashews and fresh basil leaves.
  9. Drizzle some extra sauce on top and eat them up!

Spicy Sauce 

  1. Mix everything together and then set aside for serving.
