I got the idea after making peanut satay stirfry and boy oh boy I honestly don’t know which version I like best!

Spicy peanut satay salad

Ingredients 

  • 1 cup cooked brown rice noodles any thin noodle you prefer
  • 1 cup spiralized or chopped finely carrot
  • 1 cup spiralized or very finely chopped sweet potato (Raw)
  • 1 cup spiralized or diced zucchini
  • 1/2 cup purple cabbage (pickled like mine if you like)
  • 1/2 ripe and avocado
  • 1/3 cup chopped snap peas
  • 1/3 cup corn
  • 1/3 cup peas
  • 1/4 cup salted peanuts
  • 1/4 cup chopped cilantro
  • 1/4 cup Sliced spring onions

Spicy peanut satay sauce

  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup soy sauce
  • 1/4 cup coconut cream
  • 1 tbsp rice vinegar
  • 2-3 tbsp sriracha sauce

Method

  1. Place all of the ingredients in a big bowl, top with the salad dressing and mix well.
  2. Serve as a main or as a side salad, store in the fridge for 2-3 days.
